Tres Leches (Milk Cake)

First, I did make a few changes...instead of the condensed milk, I used 1 can of cream of coconut. And I baked in a 9 inch round cake pan. The cake came out much heavier than I expected. The batter was so light and fluffy, I thought the cake would bake up very light too. But the cake was rather dense which is also why I think i had trouble with the cake absorbing all the liquid. I think the cake's texture was just too dense to absorb all the liquid. However, the taste was really good and I had people ask for seconds. I would use this recipe again for a coconut cake...but for tres leches, I want a lighter, fluffier cake recipe.

Banana Crumb Muffins

The only change I made was that I used 4 bananas instead of 3. These turned out quite nicely. Very moist, fluffy, and tasty. The only thing I have to complain is that the crumb topping didn't turn out exactly as I had liked...I wanted something more streusel...this topping was ok but not great. Although for my first time making banana muffins...pretty good turnout! =)

Cream Puffs

I just made these and they came out perfect! I followed the recipe exactly for the shells. I baked them exactly 20 minutes and rotated my pan halfway through. I filled mine with vanilla, strawberry, and chocolate filling and powdered the tops with sugar. For the vanilla and chocolate fillings...I just made instant pudding from the box and folded in some Cool Whip to lighten it up. For the strawberry, I used the vanilla/Cool Whip base and added about 1.5 tsp. of strawberry flavoring and red food coloring. Love it and these really impress! =)

Bake Sale Lemon Bars

Pretty good lemon bars. I did have to make a few minor adjustments. I definitely did not bake as long as the recipe called for at either times (crust and filling). I just watched and took it out the first time when the edges started browning. I also watched and took it out when the filling top started turning slightly golden. Definitely taste the lemon filling to adjust to your liking before baking. I added a bit more lemon juice and would probably cut back on the sugar next time. VERY easy to make. Would definitely make it again.

White Chocolate Macadamia Nut Cookies III

A pretty good cookie and my family liked it but it isn't the recipe I'm looking for. It was a bit dry/cakey. Also, you should definitely add more white chocolate (I threw in about 1/2 cup more). Instead of the almond extract, I would probably just do more vanilla. And I threw in a small handful of sweetened coconut flakes which add a nice little something extra to the flavor. Overall, it was decent flavor but I'm looking for a moister/chewier cookie.

Pretty good and super easy to make but I thought the flavor was a bit too strong. Next time I would definitely cut back on the ranch dip powder or spread less cheese in each tortilla.

Sugar Cookie Icing

Overall a decent recipe cause I liked not having to use raw egg whites. However the ratios are off. I needed more milk to make the icing less stiff and easier to stir. All the ingredients are there...just keep playing with it to make it the right consistency. Also, the flavor was only ok in my opinion...might be better with more extract?

Raspberry and Almond Shortbread Thumbprints

Delicious and super easy to make. Everyone loved them. I will try them again with different jams. Also, I made a batch where I switched out to vanilla extract and squished a hershey kiss into the cookie immediately after baking. These are great!

Jam Filled Butter Cookies

Very nice buttery cookies. Not too sweet, just the right buttery flavor. Be sure to watch the cookies and take them out when the bottoms are golden...I had to leave mine in a little longer than 10 minutes.

Pastry Cream

Pretty good pastry cream...a little eggier taste than I was expecting but still overall very good. Can be kind of dense and thick...so when I want a lighter cream, I fold in some whipped cream/whipped topping and add a little more vanilla/sugar to taste.

Coconut Cake III

I substituted cream of coconut for the vegetable oil, used store-bought cream cheese frosting, and spread a layer of seedless raspberry jam in the middle. The flavor was delicious. Perfectly coconuty. However, my toothpick kept coming out sticky and I let it bake a lot longer than the recipe calls for. In the end, when the toothpick finally came out clean, the cake was a bit on the dry side. Also, the coconut shreds do make the cake a bit crumby. Tastes good but lacks moisture.

Bread Pudding II

I was very disappointed with this recipe. The only change I made was to substitute half of the milk with cream. While the texture was OK (give it a little time to set or it will be very mushy) the taste was very bland. I was expecting a cinnamony and sweet bread pudding...what I got was bland french toast.
