Tres Leches (Milk Cake)
First, I did make a few changes...instead of the condensed milk, I used 1 can of cream of coconut. And I baked in a 9 inch round cake pan. The cake came out much heavier than I expected. The batter was so light and fluffy, I thought the cake would bake up very light too. But the cake was rather dense which is also why I think i had trouble with the cake absorbing all the liquid. I think the cake's texture was just too dense to absorb all the liquid. However, the taste was really good and I had people ask for seconds. I would use this recipe again for a coconut cake...but for tres leches, I want a lighter, fluffier cake recipe.

Banana Crumb Muffins
The only change I made was that I used 4 bananas instead of 3. These turned out quite nicely. Very moist, fluffy, and tasty. The only thing I have to complain is that the crumb topping didn't turn out exactly as I had liked...I wanted something more streusel...this topping was ok but not great. Although for my first time making banana muffins...pretty good turnout! =)

Cream Puffs
I just made these and they came out perfect! I followed the recipe exactly for the shells. I baked them exactly 20 minutes and rotated my pan halfway through. I filled mine with vanilla, strawberry, and chocolate filling and powdered the tops with sugar. For the vanilla and chocolate fillings...I just made instant pudding from the box and folded in some Cool Whip to lighten it up. For the strawberry, I used the vanilla/Cool Whip base and added about 1.5 tsp. of strawberry flavoring and red food coloring. Love it and these really impress! =)
