Red Lentil Curry

Followed the recipe as written and I was disappointed. The culprit may have been the curry paste that I used. A brand new jar of red curry paste made by Thai Kitchen. The flavor was bland and the texture was awful.

Whole Wheat Sweet Potato Muffins

Very good! I agree with a previous reveiwer that the topping is like "sawdust." However, the rest of the muffin is great! I might just use brown sugar and cinnamon for the topping next time.

Honey Peanut Granola

I just made this and I loved it. I used rolled oats, 2 cups, as that is what I had in the pantry. I also added about 1 cup of raisins, to use up the stash. Once it was completely cooled, it had a nice crunchy texture. I didn't think it was too sweet but I do have a sweet tooth!

Chicken Breasts with Balsamic Vinegar and Garlic

Pretty good...I either didn't like the amount of balsalmic vinegar used or the quality of my vinegar wasn't that good (I had to make do with a cheap brand...it was the only one the store had). Anyway, the sauce was a touch too vinegary for me. Not sure if I would make this again but I am glad I tried the recipe.

Eggnog Cake

I made this into cupcakes and didn't use the filling because I couldn't figure out how to get the filling into the cupcakes easily. I also used pre-made buttercream frosting and added the 1/2 tsp rum flavored extract. The doctored cake mix is pretty good...the only reason why I didn't give it 5 stars is because my version didn't taste all that eggnog-like...but prolly because I didn't use the filling.

Unbelievable Chicken

This is pretty good, has a similar taste to a Honey Dijon type of chicken dish. I forgot to buy a lime, so I added a touch more lemon. I also used prepared Dijon mustard as that's what I had. Perhaps that's why it reminds me of a honey dijon dish! This recipe will go into the rotation.

Fusion Chicken

Great recipe! I made it almost exactly as written, based on what I had and could find. I used regular salsa instead of tomatillo, since I couldn't find the the specified salsa in the store. I also used just one apple, as it seemed like two apples would be too much. I forgot to buy cilantro so I used dried parsley instead, and used dried Italian seasoning instead of the other herbs (didn't feel like purchasing dried oregano on it's own). I will make this again.

No Bake Pumpkin Pie I

This was pretty good. Simple to make; I love pumpkin pie and I think I will make it again. I used a ready made graham cracker crust but didn't "cook" the crust in the oven prior to pouring the filling. I will do that next time or perhaps use a pre-baked pastry crust.

Vegetable Filo Pie

This has potential. I made it as directed (with 1 tsp of salt and pepper) and I thought it was a little dry and slightly bland after baking. I tasted the veggie mixture before baking and thought it was wonderful. I might add another egg white or something to add some moisture. Or maybe I'll cover it during baking to keep in some of the moisture.

Gravy Baked Pork Chops

Like previous reviewers, I thought it was a little bland. I followed the directions. Perhaps the chops should marinate in the cream of mushroom soup prior to baking. (As long as the soup comes to a boil, you can still use it as a gravy.)

Bleu Cheese Macaroni

this is very rich and definitely for bleu-cheese lovers. If you're not passionate about the bleu cheese, cut it back to 1/4 cup and add 1/4 cup of cheddar cheese. Like previous reviewers have noted, this sauce is very thick, so either add more cream (or milk) to thin it out to desired consistency or cut back on the flour by 1/4-1/2 cup. I would also recommend chopping the bells peppers rather than slicing them...the slices were a bit big. I have another mac n' cheese recipe that I like more, so I will likely return to that one. But this is a nice variation on your standard recipe.

Southern as You Can Get Collard Greens

Maybe I used too many hamhocks,(the package contained four 1/4" slices), but this was far too salty. I did add a tsp of kosher salt because I had no idea of the saltiness of the hamhocks. I can tell the basic flavor is excellent...just too much salt.

Zucchini with Chickpea and Mushroom Stuffing

This is pretty good. Don't forget the lemon juice... I did and I thought something was missing but I couldn't put my finger on it until a re-read the ingredients list. Also, instead of making zucchini boats like the recipe instructs, I just sliced the zucchini using my food processor. I then mixed the cooked mushroom/chickpea mixture in with raw zucchini in a baking pan and baked the "stuffing" as directed.
