Buttery Rolls

Well this is a keeper. I was worried because they didn't rise much in the bread machine but they ended up making a nice 13x9 inch pan of dinner rolls for my Thanksgiving dinner. Everyone loved them. I think next time I will try proofing the yeast first. Not that it is necessary but just because I'd like to see if they would rise a bit more.

Tiramisu Layer Cake

We loved it. Made two layer with the instant coffee. Also next time I would double the filling. I also used a decorator whipped cream icing it was awesome.

No-Fuss Meat Loaf

We loved this. My husband who hates anything from a box was really suprised how much he loved it. He told me I could make it anytime. I did add a little chopped onion but that is all. Definetly a keeper.

Easy Mint Chocolate Chip Ice Cream

My first attempt at ice cream I didn't want to use something that had to be cooked first. This was awesome, but I added chopped up Andes Mint Candies instead of the peppermint extract and chocolate and I didn't do the food coloring. I will use this as a basis and experiment with other additives.

The Real Mojito

If you prefer simple syrup like I do, try adding some mint to the pan when making the simple syrup and steep. Makes the simple syrup minty!

Whit's Chicken Enchiladas

I was excited to make these and I used leftover chicken breast from a whole chicken I made the day before. After I made the filling and tasted it I thought it was really bland so I added about a half a cup of sour cream and a quarter cup of hot sauce that gave the filling a little zip. Next time I will use more cream on top, it wasn't enough for me. I gave this three stars because that is all it would have been if I didn't add the sour cream and hot sauce. I like to make recipes as stated and not have to rework anything but I am glad I tasted the filling before rolling the enchiladas we would not have liked them as written. The way I did it they tasted like buffalo chicken enchilada...yummy

Baked Teriyaki Chicken

Wow we loved this sauce. I used boneless chicken thighs, cut them so they were long and weaved them on wooden skewers. My son loved them. I used this sauce on Salmon tonight basted and broiled both sides and finished with toasted sesame seeds. That was awesome!

Teriyaki Chicken

This was a fantastic sauce and I can't wait to try it on Salmon, I think that would be great. I used chicken thighs but I cut them in half the long way and then put them on skewers, propped them up in the roaster and both sides got nice and sticky...YUMMMY my son loved them. Chicken on a stick!

Roast Sticky Chicken-Rotisserie Style

I followed this recipe exactly and even used the probe that is actually connected to my oven. It seemed not done to me even though it was in the oven for about 5 hours and 15 mins and my oven read an internal temp of 180. I have to say the taste was ok but I wouldn't make this again. I like my beer in the rear chicken which has a similar spices but only takes about 3 hours and is moist, juicy and DONE. I was really hoping to like this one.

Italian Meatball Sandwich Casserole

This was ok I stayed pretty true to the recipe except I made my own meatballs. Next time I would use half of the cream cheese and same amount of mayo. I think I would toast the bread as well. Otherwise it was very good.

Butterscotch Bread Pudding

Kansas City Style Pork Back Ribs

Very good recipe. I made the ribs in the oven at 300 degrees for three hours then put the bbq sauce on them for an hour. Finished them off by removing the foil just to expose the ribs under a low broiler for a few mins. I will make this again for sure.

Chocolate Chip Cheese Ball

This was ok but a bit to sweet for a dip. I think this would be wonderful as a frosting between a few layers of really dense chocolate cake. If I make it again I would use it as frosting.
