Black Bean and Corn Quesadillas

I love this recipe and go back to it often. I try to prepare a few vegetarian dinners per week, and it's hard to find ones where my husband doesn't miss the meat. This one is always a hit!

Excellent balsamic glaze! I had to cook for much long than stated time, however - and my salmon wasn't very thick. But I would definitely make this again.

Cajun Spicy Potato Wedges

Needs egg so the spices will stick better. I was already committed to getting the spices on there, so I had to use extra olive oil to make it work. Excellent flavor, and they went over very well at dinner.

Quick Lemon Dijon Chicken

The flavors in this are fantastic, however I didn't find the recipe well put together. I followed the directions exactly as specified and nearly dried up the sauce. I would cook the chicken at least half way through first, then add the Dijon mix toward the end. I had to add water to keep mine from drying out completely.

Classy Chicken

This is a really fabulous recipe, made with things I never would have thought to put together. The only thing I change is to pull some of the liquid out of the pan and mix it with the sour cream/mustard before adding to everything else. It gets rave reviews at dinner!

This is a really fabulous recipe, and worth the time it takes to make it! I cut back on the salt and added whole cloves of roasted garlic. Tastes even better the next day!

Szechwan Shrimp

I made the sauce exactly as called for in the recipe and all I tasted was a ketchup soy sauce flavor. Normally I find review averages on this site very helpful, but I don't see it in this recipe. This ended up in the sink before it had a chance to contaminate my shrimp.
