Praline Pumpkin Pie II

OH MY!!! I am not a baker so I love how easy this recipe is. I made one last week before Thanksgiving to see how it was before bringing it to my family. Holy Moly was it good. I gave a few pices to my friend who called me right away for the recipe. I ate the rest myself. Yes I ate 1/2 a pie before Thanksgiving was even here. I made 2 for my family and one for my bestfriend. Everyone loved it. My besfriend called the day after and said she had it for brekfast. I like it a bit less chilled so I took it out as we sat down for dinner. I will make many more of these pies over the holiday..

Stuffed Peppers with Turkey and Vegetables

Loved it. I did cook the peppers for 25 - 30 minutes because I like my peppers softer. I doubled the stuffing recipe and used it in eggplant lasagna. Fabulous and so filling. I am doing Weight Watchers Core Program and this was a great find. Thanks Joy

Ricotta Cookies II

I love ricotta and almond so I used all almond extract. I also refrigerated the dough for 2 hours to make it eaiser to handle. I also froze half my batch and put the frosting on after i took them out.

Cranberry Pistachio Biscotti

Holy Moly!!!!!!!! This is the most easy recipe in the word. The only downside is I ate the whole batch myself and now I need to make more.... I was a bit nervous about the texture before baking but sooooo pleasantly surprised at the end result.

Sun-Dried Tomato Cheesecake Squares

I Love this recipe. It was very elegant for my New Years Eve Party. Just a tip: I used a Tupperware tumbler to roll the crust into the baking dish. I think for such simple ingredients the outcome is very sophisticated.

Pineapple Upside-Down Cake V

My family named my cake the ugly upside down cake. It was moist and delicious but boy was it ugly. It looked like it got hit by a car. I don't blame the recipe because I hate to bake. I love to cook but hate to bake. SouthJersey Joy
