Crabless Chicken Cakes
This is an excellent way to use up leftover chicken. I often go to the grocery store (Publix) and get their chicken wings just to make this recipe. I brought them into work one day and now others rave about this recipe and make it also. I add more mayo rather than tartar sauce, I add more hot sauce, and plain bread crumbs that I season with whatever is on hand. ADD THE EGG too, it holds everything together nicely. I also use fresh parsley if on hand. I serve with black eye peas and a salad. My toddler loves them.

Onion Roasted Sweet Potatoes
Very tasty alternative to sweet potatoes. I did pull them out of the oven at 30-minutes and kept picking at them while the rest of the meal cooked. I had to force myself to leave some for dinner :). Thank you for a great recipe!

Kalua Pig in a Slow Cooker
Fantastic! My search for Hawaiin Salt was difficult but worth it; I initally thought everyone complaining about the salt-content were wimps, but they're not. It IS salty, and I would reccomend using only 1/2 to 3/4 of the amount suggested. I used a pork picnic b/c the store didn't have a butt. Cooked on high for the first 4 hours (started at 7AM) and then to low for the remainder of the day. It was perfect by 7 PM. I have an oval crockpot, I think it's the stone-ware one. Fabulous with Hawaiian rolls!

Pile it into a tomato half, load it into a wrap, or spread it on bread. Chicken salad does it all.

Broccoli salad makes a great side dish or a light main dish on a warm night.
