Oregon Salmon Patties

With the help of some other reviews, I used this recipe to make a meal that could easily be served in a fine restaurant. The end result was fantastic. I began by sauteing some baby bella mushrooms in butter and balsamic vinegar. When it came to the actual patties I, like many others, did not use the 3/4 cup liquid from the salmon. In fact, I didn't use canned salmon at all. I had grilled some salmon in butter and onions two nights before and had some left over. I just picked this apart and used as much as the recipe looked like it could use. I also added a little more than 1/3 cup of the crackers. (I used buttery Ritz crackers and they worked great.) I also chose to add some dill and lemon pepperto the pattie mixture and instead of the butter or shortening, I substituted olive oil. (I saved the butter for the mushrooms and the sauce.) Finally, I made the lemon sauce for salmon patties from this sight like so many others suggested. This sauce made the meal. I will admit that the patties probably would have been a bit dry without it. I put down a bed of the mushrooms, set a pattie on top and then topped the pattie with a generous tablespoon of the sauce. I finished the presentation with a swirl of the sauce around the pattie on the plate to make it look like it belonged on a menu in some upscale restaurant. It looked amazing and had a taste to match. I will make this over and over again.

Light Oat Bread

I was afraid that the oats would be gritty in the bread, but they baked right in. You can't really even find them as you're enjoying each bite. I love this bread. I added 2 tablespoons of honey because honey oat is one of my favorites, and I don't think I will ever purchase another honey oat loaf of bread from the store again. I brought it to work to share with the lunch group and they all loved it too. They all said that it was moist and light. A+ for this recipe. (I'm a teacher.)

Ham and Swiss Stromboli

I've made this simple stromboli for many years now, and everybody loves it whenever I make it. Try making a rueben stromboli with corned beef, well drained sauerkraut, Swiss cheesse, and a little thousand island dressing. You can add more thousand island dressing after the sandwich is done by dipping it before eating. If you add too much to the sandwich, the French bread will get too soggy. The same happens if you don't drain the kraut well. Yummy! Enjoy!

Tomato Barley Soup

I really liked the final outcome of this soup, but I will admit, I did make a lot of changes based on some others' suggestions. I added 2/3 c. Pace mild salsa with the tomatoes. I used three 14 oz. cans of beef broth in place of the water and chicken broth. I also added a bit of cumin and about 1/2 tsp. chili powder. Next time I think I will also add some beef. This was very healthy, very tasty, very easy and froze wonderfully.

Skillet Green Beans

I always have a difficult time finding simple yet tasty side dishes, so when I find one, I don't hesitate to give it five stars. I made this recipe as is the first time (with the exception of using fresh beans) and loved it. The second time I added bacon bits and loved it even more. Thanks for the recipe.

Tangy Grilled Pork Tenderloin

I made this recipe as is and found it very tender and tasty. I kept some of the sauce aside instead of using it with the meat and I heated it with melted butter as the meat finished grilling. To serve I sliced the pork in thin slices and drizzled the sauce over top. This was very enjoyable and I will definitely make it again.

Watermelon Margarita

If you like watermelon you will enjoy this drink. Great tasting as is or add a touch of Midori Melon for another yummy taste. I did not bother double straining the drink because I don't mind bits of watermelon floating around. (I just picked out any of the little white seeds that made it through.) I also chilled the shaker in the freezer and added a few ice cubes to the liquid in the shaker. Can't wait to share this one with friends.

Blueberry Waffles with Fast Blueberry Sauce

This was difficult to rate because it is actually two recipes. I don't have a waffle maker so I didn't make the waffles. Instead I am rating only the sauce. WOW! This is one of those recipes that you get so excited to find (if you are a cooking geek like myself). What a healthy alternative to syrup on your pancakes. I tried it on ice cream and once again the taste was outstanding. I don't care to eat just plain blueberries, but they are so good for you that I wanted to find a way to fit them into my diet. I actually make this recipe once or twice a week now and spread it over my regular oatmeal in the morning. If you have high blood pressure this is a great substitution for the packets of flavored oatmeal. I went from 340 mg of sodium in two packets of Quaker Apple and Cinnamon Instant Oatmeal to 4mg by making regular oatmeal and adding this great sauce for amazing flavor. Thank you so much for sharing this recipe with us.

Blueberry Spinach Salad

I decided that I need to get some healthy fresh spinach into my life, so I bought my first bag and started looking for recipes on Allrecipes. I had to make some changes due to what was in the house, but the flavor blend of this recipe was great. I omitted the blue cheese to make it healthier and instead of making the dressing I simply added some dijon mustard to some raspberry vinaigrette dressing that I had on hand. This salad was so tasty and healthy. I will make it over and over again.

Fresh Pea Soup

This was so easy and really tasty. It was great as is and then I made some adjustments and liked it even better. I used low sodium chicken broth in place of water, added two cloves of garlic and as onion in place of the shallot that I didn't have. I also added a handful of spinach. While this was boiling I sliced two carrots into circles and boiled them for a few minutes in the microwave until they softened. I added half of the boiled carrots to the peas when they were finished boiling and then I used my immersion mixer to blend it all up well. I did not strain it (I like my pea soup thicker). Finally, after pouring the soup into a bowl, I added the rest of the boiled carrot circles and a dollop of sour cream. This was so fast, easy and tasty that I will make it often.

Chicken Fried Chicken

WOW! This was amazing. This recipe is easy and it will not disappoint you. I've been trying recipe after recipe to find a home made chicken tenders recipe that I like. I love tenders dipped in honey, but when I go out to a restaurant for them the sodium levels are so high somebody like me who is watching their sodium intake due to blood pressure runs into many problems. With this recipe I was able to control the sodium by using low sodium saltines and a sodium free seasoning mixture and still spoil myself with some outstanding tenders. I can't get over how tasty and crispy these were. I'm wondering--- can anybody tell me how long would I deep fry the pieces if I choose to make bone in fried chicken with this breading? Thank you so much CASSJW for an outstanding recipe. I will make it often.

Avocado, Tomato and Mango Salsa

I really enjoyed this recipe. It isn't one of my absolute favorites but I've been looking for a healthy munching snack and here it is. It has wonderful flavor, and is very unique. I like garlic, but next time I will cut it way back because it seemed to over take the dish instead of compliment it. The only unhealthy thing in this dish is the salt, so don't add it. It doesn't need it. I also zested the lime into the salsa and added much more than 2 Tbs. of lime juice. I'm almost embarrassed to say that this dish introduced me to one of my new favorite fruits. I never had a mango before trying this salsa. They are fantastic. I didn't quite know how to prepare one, so I did what any modern woman would do. I googled it. Slow Cooker Beef Stroganoff I

This is a fantastic recipe. I was so hungry that I forgot to add the cream cheese and it still tasted great. Then I added the cheese and it was just as great. (So if you want a little less fat, skip the cream cheese.) I listened to Jillybean and added a bouillon cube, pepper, garlic and sauteed mushrooms and served it over egg noodles. I didn't add extra salt though and I really don't recommend it. Wow, this was a super easy and super tasty meal that I will make often. It tasted even better the next day.

Mango Salsa Salmon

I enjoyed this recipe as is and then of course made changes the second time around. First of all I feel like this recipe is all about the salsa and very little about the salmon. I started by brushing olive oil over the salmon and then sprinkling it with lemon pepper and dill. Next I made a mango sauce by adding the diced fruit of one mango into a small sauce pan and adding 1/2 c. cream and 1 Tbsp. lime juice. (Be careful not to curdle your cream.) When this was hot, I used my hand blender (a normal blender would work too) to blend this into a creamy sauce. I spooned this sauce over my grilled salmon and around on the plate and then scooped the salsa on top of that. For the salsa I reduced the amount of onion and garlic because these things tend to overpower the recipe for me. I also added a sliced avocado and the juice of half a lime. WOW what a great flavor. I know that I made a lot of changes, but I liked the recipe as is and I love it when I read a recipe that gets me thinking about how I can creatively make it even better.
