Rachael's Superheated Cajun Boiled Peanuts

I will try it soon! I am from GA, but live in CO. We can't get raw peanuts here. I usually have to have my relatives ship them to me....and people look at me crosseyed when I say "boiled peanuts". However, everyone who's tried them has LOVED them and found them quite addicting. I boil mine in a slowcooker too, but have to turn the heat up--the altitude here makes a huge difference. I am so glad to see something so loved in the heart of the south start rising to the surface!

Mango Chicken Piccata

I wish the coating would have stayed crispy, but I had to simmer much longer for doneness. Chicken was very moist and flavorful.

Potato Leek Soup III

so rich! never any leftovers. I tweaked recipe just a little. added flour after sauteeing leeks and used broth to thicken. cooked potatoes in broth mixture, then added only 1/4 cup of halfnhalf. serve with garnishes to load it up: cheese, bacon, sour cream- YUM

Pesto Cheesy Chicken Rolls

very tender and juicy. I used 2 chicken breast and after flattening, halved them. I used regular slices of provolone (out of mozz). When rolled, the bundles came out just the right size for a serving. At this size, they stayed together well, and were not clumsy when finished.

Shoyu Chicken

Fantastic and easy, made with a lot of staples, so it was quick to pull together. Make a little extra marinade to set aside before marinating the chicken. Use this extra, boil about 10 minutes, turn off heat. Stir in one tbsp. peanut butter and whisk until smooth. Pour sauce over unseasoned ramen noodles. Makes a great base for the chicken. I also added carrots and green onions to the noodles.

Dark Chocolate Bacon Cupcakes

This was a good from scratch recipe, but it didn't blow us away like I thought it would, judging from the great reviews. I am going to try a quicker easier version by just adding bacon to chocolate cake mix.

Shrimp Dijonnaise

I doubled the sauce ingredients (except the lemon, based on reviews), added some veggies with the shrimp to marinate. I cooked all that in a pan- brought it up to boiling for safety, then kept it simmering at a med/high heat until the shrimp were pink and veggies tender. I mixed it all with pasta. It was pretty good, a little tangy. I will probably decrease the mustard just a bit next time.

Apple Peanut Butter Crisp

a little dry and overly sweet. adding cream to serve with helped cut the sweet. I will say that my husband doesn't care for peanut butter, but he could not stop picking the topping and eating it. This was good for a quick warm dessert with few ingredients.

This sauce is really yummy! I did add a cornstarch slurry to thicken it slightly. I am going to try roasting vegetables in this, the buttery flavor should be great with them.

Yummy Roll Ups

Pickle Rolls! I've been making these for years after getting the recipe from a friend. They are SO good--one of those things you would never think to put together. and they are so easy, my young son makes them for himself as a quick snack! Glad to see this on here for sharing.

Crispy Orange Beef

Really good- my husband made several approving comments while eating it. I substituted orange marmalade for the OJ because that's what I had and it was still fantastic. I left out the zest since the marmalade has zest in it.

Balsamic-Glazed Salmon Fillets

This recipe worked perfectly. I like balsamic, my hubby doesn't. He likes salmon, I don't. This recipe was a nice combo and we both loved it. I did add a little extra honey to help cut the vinegar more, it came out with an almost teriyaki flavor. The fish was moist, meaty, and perfectly cooked.

Grilled Orange Vinaigrette Chicken Salad

I doubled the recipe and used half for marinade, half for dressing as suggesed by others. I also cut my chicken into strips beforehand and marinated for 30 minutes. Although having several pieces on the grill was a little more work, the chicken was very moist/tender and each piece was delicious. As for the marinade being used as dressing... i would have prefered it a little thicker, maybe next time I'll add a little mustard or more oil. I did add some fresh herbs (basil, lemon verbena) the flavor was very bright. Perfect for a summer dinner salad.

Chicken Asparagus Roll-Ups

This was really good. I drizzled butter over the chicken about 5 minutes before it was done. It browned up/crisped nicely. The chicken stayed moist. Wasn't too hard to put together, and presented well.

Honey Mustard Chicken with Pretzel Crust

too much mustard for me, but I tweaked it a little for my own taste. The crushed pretzels made a wonderful crust. I also did not flattened my chicken, so needed to increase the cooking time. Still a great dish with a nice twist.

Shrimp Chowder

i kept the ingredients the same, but cooked it in different order. After the onions, I added the potatoes and upped the broth to 2 cups. Cooked the potatoes for 15 minutes until tender, turned the heat down and added the milk/cream cheese. Turned out the perfect thickness, didn't burn, and was very tasty.
