About this Cook
I grew up Southern, but live happily here in Colorado with my husband and son. New recipes and experimenting is the norm. I lean towards cooking southern style comfort foods and balanced meals.
My favorite things to cook
Roasted Garlic. I make a big pan and transfer to tupperware to keep it onhand always. I like cooking soups/stews, seems like it's never the same twice, but always good. I also like slow cooked meals, it smells up the house so nice and is so easy.

Rachael's Superheated Cajun Boiled Peanuts
I will try it soon! I am from GA, but live in CO. We can't get raw peanuts here. I usually have to have my relatives ship them to me....and people look at me crosseyed when I say "boiled peanuts". However, everyone who's tried them has LOVED them and found them quite addicting. I boil mine in a slowcooker too, but have to turn the heat up--the altitude here makes a huge difference. I am so glad to see something so loved in the heart of the south start rising to the surface!

Mango Chicken Piccata
I wish the coating would have stayed crispy, but I had to simmer much longer for doneness. Chicken was very moist and flavorful.

Potato Leek Soup III
so rich! never any leftovers. I tweaked recipe just a little. added flour after sauteeing leeks and used broth to thicken. cooked potatoes in broth mixture, then added only 1/4 cup of halfnhalf. serve with garnishes to load it up: cheese, bacon, sour cream- YUM
