Country Style Fried Potatoes

I just threw these on the stove with oil on medium heat. They were sticking to the pan, so after about 15 minutes, I stuck them in the oven in a pan broil and cooked them, stirring occasionally, for about 10 minutes and they turned out perfectly!

Baked French Fries II

Delicious! I used fresh basil from my garden, Johnny's seasoning salt, freshly ground pepper and sprinkled cayenne pepper over the potatoes. Spicy and delicious, and non-greasy! Also, I just used two good sized potatoes and it was plenty for my husband and I.

Spicy Garlic Lime Chicken

It was delicious. I doubled the amount of pepper and cayenne pepper and it was great. Also when I was finished browning the chicken, I removed it and added a tbs. or so of flour and 3 tbs chicken broth. I blended it and then added the chicken, poured half the lime juice on it, added the garlic, and then when i turned the chicken added more lime juice. I also added Tequila toward the end of the cooking time. All that produced a delicious chicken with its own gravy. mmm!

Taqueria Style Tacos - Carne Asada

I did a lot of research, and no matter how good your marinade is, you have to know how to cook the meat properly to get a good carne asada taste. That being said, the marinade of this recipe is good, the necessities being tomato, lime, cilantro, jalepiño, salt and pepper. You don't really need the other stuff. HERE IS HOW TO COOK CARNE ASADA: 1. Make sure the steak is really thin before you cook it (My grocery store puts a "Carne Asada" sticker on their skirt steak which is helpful). 2. OMIT THE SALTS FROM THE MARINADE.After it is done marinating, right before you grill it, pat it dry (so it will get darkened faster on the grill). 3. Place steak on VERY HOT grill and liberally pour salt (kosher is best) over each piece. It only takes a few minutes to cook. You will know it is done when the salt has melted. 4. Flip the steak, pour salt on the other side. Again, the salt will be melted when it is all cooked. 5. Keep in a nice dutch oven or heavy pot until ready to serve. Hope this helps someone! It really made a difference in my carne asada.

Debdoozie's Blue Ribbon Chili

Wow, I've finally found a chili recipe that tastes like actual chili! The great thing about this recipe is that it is simple, pretty quick to prepare (tho you have to wait a few hours for it to simmer), and modifiable. I read a lot of reviews where people changed ingredients and it tasted great! Here's what I did: As soon as the meat was browned/onions tender, I added all the spices to the meat and stirred it well (before the sauces). I added some Worschire sauce and one chopped fresh jalepiño. I also didn't have any tomato sauce, but had pizza sauce in my cupboard and that worked just fine! I added all the liquids and a little bit of water because it was too thick, and let it simmer for over 2 hours. I tasted it part way and it was missing something so I added Johnny's Seasoning Salt and that was the trick. It was soooooooooooooo good. Thanks for giving me a great chili recipe that I can use over and over! :)

Favorite Peanut Butter Cookies

Pretty good, I cooked at 350 for 9 minutes and they still turned out a bit crispy. I prefer a chewier cookie, but if you like crispy cookies this one is for you :)

Spiced Pot Roast

Didn't have nor have I ever used chutney before...and I used Craisins instead of raisins because that was what I had. that said, this recipe was FANTASTIC! Why didn't I think of using the dutch oven sooner? I've been using the "bag method" and it's never turned out right. This was soooooooo tender. I ended up turning the heat down to 300 and roasting it longer, as I read this was what you should do for the cheaper cuts to ensure more tenderness.

Stuffed Peppers

pretty good. I covered with cheese as well, and because my mom would never let me throw out perfectly good peppers, i diced up the tops of the peppers and added that to my mixture. I also added some crushed hot peppers. Next time I think I will add even more--we like it spicy:)

Cinnamon Rolls II

This recipe is easily halved :) As for refrigerating the night before baking, I let the dough rise for an hour before I shape it into rolls. Then after shaped into rolls, I put in pan in fridge covered with plastic wrap. Then I turn the oven on in the morning and let them rise at room temperature/on top of oven for about 30 min-to an hour, until about doubled. Works wonderfully. And the frosting is sooooooo good!

Spicy Chicken Breasts

Great flavor, not too spicy but it has nice heat:). I might add more pepper/cayenne pepper next time. Didn't add anything, and grilled on my foreman. LOVE the dry rub! mmmmm:) 6 stars!

Really good, and I don't like pork. For a delicious buttery alternative, use crushed potato chips instead of crackers--My great Aunt always does it that way, mmmm! :)

Following the recipe exactly (creaming the cream cheese, not overbeating the other ingredients, and never opening the oven for the 2hrs and 10 minutes it's in there) made it turn out perfect! my first try it was delicious--perfect rich texture, great flavor and no cracks even! :) Mmmmm. Everyone loved it

Squash Stuffed Chicken Breasts

Well it passed the husband test. He doesnt usually like "weird" things like squash...but this was great. I used butternut squash instead of acorn, and didn't have green peppers. I used Johnny's Seasoning Salt. It was delicious anyways! Very moist and flavorful! We loved it :)
