Banana Bread VII

Very good recipe...I had 4 bananas turning so I wanted a recipe where I would have all the ingredients. Sister loved it...the whole thing is almost gone! Used a 9x9 glass pan (it baked a lot quicker), subbed splenda for the sugar, and canola for the veg oil to make a little healthier. Will make again!

Tomato Basil Towers

I love this recipe! But I used slices of fresh moz instead of gorg and goat cheese (although I will definately try those sometime...sounds heavenly!) and also use roma tomatoes as they are not very juicy when making small appetizers. Yummy!

Summer Squash Bread

Delicious! Had a bunch of summer squash, so found this recipe! Added pecans and sliced almonds, and also sprinked top with brown sugar which carmelized during baking...added a bit more sweetness...a huge hit...made another batch the next day! Great way to eat that menacing veggie!

Basic Pasta

My first time ever making homemade pasta! A great success...don't have a pasta crank, so used a small bread roller...cut the pasta into several pieces, rolled out, and cut into fettuccini sized pieces with a pizza cutter. Had to add an extra egg...but that could be because of the humidity, size of the eggs, or the fact that I tripled the recipe. So easy that I simply told my little sis how to make a few days later and she made a great batch! A permanant addition to my recipe collection!

Baked Asparagus with Balsamic Butter Sauce

Yummy! Got the recipe off of this site about 20 minutes ago, and already ate it! Very fast, but with a sophisticated taste. Used Promise for a healthy twist, and made extra sauce...hubby loved it! Will try suggestion of scorching butter for next time...which will be soon!

Hungarian Lecso II

This was soooo delicious! Left out the onions, reduced recipe for just me and hubby by using 1 can tomatoes, 4 eggs, and 1/2 large green pepper. Also used 1/2 hot Hungarian paprika and 1/2 sweet, gave it a great twist! To reduce cooking time, simmered at high temperature to remove tomato juice. Lastly, melted cheddar on top. Soooooooooo good! Don't miss the meat at all!

Pesto Sauce

Great! Used the basil from my garden and used 1/2 c pine nuts and 1 c walnuts, making this a very cheap meal! Put in extra parmesean and about an extra c of olive oil (and it was still incredibly thick). Tossed with wheat 3 cheese tortellini and garlic wheat toast. So fast and everyone loved it!

Baked Ziti Casserole

Amazingly Easy Irish Soda Bread

Unbelievable Spinach Calzones

Indian Saffron Rice

This rice was beautiful and tasty. Used a tea strainer since I only had saffron strands. Took a coffee filter and cut a square out and wrapped the saffron in it, then put it in the strainer and in the water. Came out rich and yellow. Served with Tandoori Chicken from this site.

Cornbread I

Quick and easy cornbread just like Grandma used to make. Hubby loves it with pinto beans. Don't have cast iron, but comes out just fine in a loaf pan. Thanks! Made a healthier version by using milk and leaving out the oil!

Amazing Whole Wheat Pizza Crust

Wonderful recipe! I used only whole wheat flour and substituted honey for the sugar as well. While I was kneading, I added in about a tablespoon each of garlic powder, basil, and oregano. It was a hit! While topping the pizza, I spread a homemade garlic butter on the crust, which really brought out the flavor (2 minced garlic cloves, 2 tbsp butter or margarine, splash olive oil, basil, parsley, and oregano). Even with only whole wheat flour, it still came out light and fluffy! I also cooked it for about 5 minutes before the toppings, that way I could dress the pizza and when the men came in I could throw it in the oven without it getting soggy. Thanks!

Creamy Hot Cocoa

This is a very good hot cocoa recipe! I like to dry roast the cocoa in a pan to bring out the flavor, then I add Splenda (less than 1/2 cup), salt and hot water. This was very good. Next I am going to see if I can make it better by making 1/2 of it Baker's chocolate and adding honey and cinnimon! Thanks for the recipe!

Fried Rice II

Very good! Even more flavorful if you get real soy sauce from local Asian market. Also, used jasmine rice for extra flavor, cooked it, and put in in the freezer...stirred it every ten minutes or so and it was cool within a 1/2 hour and ready to go! Served with the General Tsoa's on this site.

General Tsao's Chicken

Very good recipe...also used crushed red peppers as a substitute and used soy sauce from my local Asian market, so it came out A LOT darker than the picture ans also richer. But the taste was wonderful. If you use the real soy sauce, be careful not to add extra salt, because the sauce is very salty. But hubby and I loved it and it tasted better than the local restaurant! We used chicken breasts and served it with Fried Rice II from this site. Also, sauteed it in canola to reduce bad fats.

Breakfast Pizza

This was a great base idea. I cooked the crescent rolls for about 5 min before adding the toppings to prevent sogginess, used crumbled turkey sausage and added gravy. I also softly pre-scrambled the eggs to prevent leaking. Used Mexican blend cheese and it was great! Made two and used a pizza crust for one and crescents for the other--both great!

Barley, Lentil and Mushroom Soup

Good base recipe. Left out the celery and added garlic, green peppers, and potatoes. Also, didn't have any beef broth, so I used veggie and added a few beef boullion cubes. Great versatile dish that can be ad-libbed depending on what's in the kitchen!
