Beer Batter Fish Made Great

This is another in a collection of probably a hundred beer batter recipes. It's good, but nothing to write home about. I agree with other reviewers...cut down on the salt! Also, if you want a nice crisp finish to fried fish put them on a rack not on paper bags or towels which tend to hold the oil coming off the underside and make the filet gooey. Also, here in Wisconsin you always use 2 bottles of beer. One for the fish, the other for the cook!

Fisherman's Quick Fish

Not a bad recipe for those who really don't like fish. The flavor of the fish is lost in all the stuff you did to it. Maybe some like that, but I'll never make this again.

Fried Onion Rings

Good one! A lot less doughy than those premade onion ring batters. Also, don't forget to increase the beer by another can. You don't add anymore to the recipe, but you do need to keep from getting dehydrated while standing in front of that hot fryer. What can I say...it's Wisconsin!

Beer Brats

Okay, first of all way too much beer. You need to do this in 9x13 baking dish with the onions at the bottom, the brats over the top and about a can to can and a half of beer (you drink the other half and the other two you wasted boiling the brats) and then covered with foil. You cook until the brats are gray on the outside and then grill them. This way lthe flavor you were putting into the beer goes into the onions. And what's up with turning the brats only once? Really?

Leftover Pancake Breakfast Sandwich

It's a great idea and very good, however I'm a fan of swiss cheese so I subbed that for the cheddar. Basically this is a Pancake McMuffin. Try 'em!

Ultimate Party Meatballs

Have made these for years. They are as advertised...quick easy and good. If you don't have the jellied cranberry sauce, grape jelly works too. If you want to make your own meatballs, be my guest. However, you are then removing the 'quick' compnent of this recipe.

Fresh Broccoli Salad

This is a really good salad. One suggestion, if you are pressed for time, which I always am, use the premade bacon. Saves you time and a messy pan.

Very tasty, but for me once was enough. Tip...don't waste the Grey Goose on this drink. Any old cheap vodka is good enough. You really wouldn't be able to taste the difference anyway.

Mustard Pomegranate Pork Tenderloin

This is really good. One tip. Let the orange and pomegranite juice come to room temp or the honey is just going turn into a lump and not compbine very well with the other ingredients. You can then put it in the fridge.

I agree with those who marinated this...the longer the better. Great recipe. Forget the aluminum foil. If your grilling it and it doesn't come out with grill marks...why bother?

Chicken and Broccoli Alfredo

This is okay, but just for fun I made it two ways. The first way is according to the recipe. The second way was with commerically prepared precooked cubed chicken and Paul Newman's Own Alfredo. Truth be told...the Alfredo was better which made the whole dish better not to mention faster. Just an experiment for what it's worth.
