Tomato Zucchini Casserole

Really good with these modifications. 1. No oregano, eliminates the pizza taste that was a complaint. 2. Used seasoned bread crumbs and a little Emeril's Essence to "kick it up a notch".

Taco in a Bag

This is also a terrific fund raiser. We call them Walking Tacos because you can walk around and eat them. When folks are done they just throw away the plastic fork and bag. Easy peasy. They sell like hotcakes. Pun intended.

Roasted Tomatoes with Garlic

This is one of those great "What am I gonna do with this?" recipes. I do this when I have a half a dozen cherry tomato plants going full bore. I look over on the counter and see the basket of them that I picked a few days ago and have been munching on but haven't made a dent in yet. Solution...this recipe.

Meatloaf Cupcakes

Loved them. To deal with Angela's problem; I put the mashed potatoes in a pastry bag and used the largest tip I had. A little finely shredded Wisconsin sharp cheddar on the top and you have a tasty and nice looking meal. Oh, and with 4 grandsons...ya gotta use a 12 cup muffin tin and double the recipe. (;o)

Baked Pancakes

While this was okay, it is in no way shape or form a pancake. Made it for the grandsons and they said..."It was okay Papa, but I thought you said we were having pancakes. Lesson here is, make it, but call it something else. As for me...haul out the griddle and start flippin'.

Mushrooms Berkeley

Being of Czech, actually Bohemian, descent I grew up with mushrooms of all sorts. Pickled, sauted, dried, raw, deep fried puff balls, you name it, we ate it. Heck we even put them on ice cream! Just kidding. This recipe is great. Never did the brown sugar thing before, but love the sweetness. If it's too sweet cut it down or out. Whatever trips your palate. Enjoy!

Popcorn Shrimp

Great stuff! I substituted Panko for the bread crumbs. Gives it a wonderful crunch. Also put them on a wire rack with paper towels under it. That way they stay nice and crunchy.

Easy BBQ Bake

Gave this 4 stars for easy. I didn't mess with the honey BBQ sauce, butg grabbed the bottle of Sweet Baby Ray's Honey BBQ Sauce. Good and easy.

Spicy PBJ Wings

Sauce is good, but I used my deep fryer. A lot less fooling around than trying to "fake" the deep fried texture and taste. Also did this with drumsticks. Excellent. Way more meat and CHEAPER!

This is just good old fashioned in your own kitchen cooking. It proves simple is best. Others suggested adding garlic, rosemary and so on. I say...knock yourself out! Whatever trips your trigger. Enjoy!

Alyson's Broccoli Salad

Was very good. I used Oscar Meyer real bacon bits and eliminated the frying of the bacon and smelling up the house. Also thought I had sunflower seeds but didn't. But the cashews I had on hand were a wonderful substitute.

Pickled Grilled Vegetables

Okay at best. Grilling is an unnecessary step and softens the cukes. No crunch. My fridge pickle recipe is where I think this recipe would like to be. Also, Kosher salt in canning results in cloudy brine which is unappealing.
