Creamy Chicken and Noodles

Reviewed: Mar. 2, 2014
I swear I was going to follow this recipe to the tsp. But when I discovered I had no egg noodles I thought I would use fettuccine instead... than realized I didn't have enough fettuccine, so I added in some angel hair pasta. I was also hoping to add frozen broccoli, carrots, cauliflower mix and was out of those. Last minute I added a handful of fresh spinach. The sauce is very rich and wonderful. Once done I added some fresh Parmesan and it was perfect. I will definitely make this again and add different veggies to the mix, but the basic recipe would be perfect all by itself. This is a keeper!

Real Italian Calzones

Reviewed: Nov. 4, 2013
I love the recipe. It depends on who is eating(husband, younger son, grandsons) on how big I make them. My son is not a fan of ricotta so I started experimenting with different fillings. Everything from ham and cheese to pizza filling. I generally double or triple the dough and instead of 2 large calzones I make a bunch of smaller ones. I take the extras and after cooking them I allow them to cool, wrap in waxed paper and place them in a gallon size freezer baggie. They are wonderful for a quick lunch or if chaos makes supper a hassle, I can heat up a bunch for dinner. Just popped in the microwave in the waxed paper or put in a preheated oven until nice and hot. This dough has so much potential for different types of sandwiches, you can add practically anything for a great lunch or dinner. I'll try chicken and vegetables with a light sauce next time.

Cabbage Rolls II

Reviewed: Mar. 22, 2009
My mother in law is famous for her cabbage rolls. I couldn't find her recipe so I used this one... it was close by I had to make a few adjustments. I used ground turkey instead of the ground beef and used italian ground sausage so my husband wouldn't miss the beef. I doubled the tomato sauce like others here have and also added a 32 oz bag of saurkraut. A litte on the bottom of the pan under the rolls and the rest on top after the tomato sauce was added. I also cooked it in a 9x13 glass dish covered with aluminum foil on 350 degrees for 1 hour. I probably should have removed the foil for the last 10-15 minutes, but my husband said it was the best he has ever eaten... better then his mom's!!! Thanks for the recipe and all the comments. They helped tremendously.

Cake Mix Cookies IV

Reviewed: Nov. 5, 2007
I had boxes of cake mix leftover from a Christmas project so I thought we would experiment with this recipe. First we used 1 box of cake mix, but it was too runny, so we added another box. We used 2 18.5 oz boxes of cake mix 1-yellow 1-white, 2 eggs, 1/2 cup canola oil, 3.9 oz cup of natural applesauce, 2 heaping tablespoons of cocoa powder, 2 teaspoons of vanilla and 1 cup of old fashioned oatmeal (all we had in the house. We baked 1 batch of cookies and decided it needed something so we dumped in a package of milk chocolate chips. My 5 year old LOVES them... I think they are pretty good too.

Herman Coffee Cake

Reviewed: Oct. 15, 2007
This is an excellent coffee cake! I used Splenda brown sugar for the topping and it turned out very well. The longer this cake sits the better it gets... by the 3rd day it was still moist and tasted better then the first day. I'm now baking these in 6" bundt pans. Once the topping gets solid I put them on plates and freeze them, then vacuum seal them and will be giving them out for Christmas gifts. My next batch I might hold off on the topping and do that once I take them out to thaw closer to Christmas.

Exquisite Pizza Sauce

Reviewed: Jan. 18, 2006
We use this all the time... I cut down on the honey and don't use anchovies. I printed this out on magnetic sheets and keep it on my fridge door so it's handy when we make pizza. I use it along with Jay's signature pizza crust.

Jay's Signature Pizza Crust

Reviewed: Jan. 18, 2006
Excellent pizza crust. We use it in combination with Exquisite Pizza Sauce. Sometimes we make a double batch and the second batch we roll up into breadsticks, spray them with a bit of olive oil and sprinkle fresh parmasen cheese and romano cheese over them and bake.
