Mushroom Barley Bake

Reviewed: Nov. 6, 2011
Delicious! I used 8 ounces of fresh mushrooms and sautéed two cloves of minced garlic. It was fine with a tablespoon of dried parsley. Lastly; I used quick cook barley and only cooked for 45 minutes.

Pineapple Cracker Spread

Reviewed: Jun. 25, 2011
Served to a bunch of bikers at a progressive dinner ride and every bit was eaten and looking for more. Delicious and easy. Only change, I added 1/2 tsp. of seasoned salt. Served with regular Ritz crackers and the Ritz Brown Sugar Cinnamon.

Weeknight Pork Chops

Reviewed: Jan. 22, 2011
I found these easy and delicious. Seasoned chops with salt & pepper, then browned. Prepared double batch of sauce using Apricot All Fruit Spread. Spread sauce on both sides of chops. Placed in 13x9-inch pan. Pour remaining sauce on top of chops. Baked at 350 degrees for 30 minutes for thin chops. (Probably need longer for thicker). Served pan juices on the side. Chops had a nice flavor and were moist. I look forward to trying other fruit spreads.

Marinated Baked Pork Chops

Reviewed: Aug. 12, 2010
I followed the recipe for the sauce, temperature and time. I used four very thick boneless pork chops - probably 1-1/2 to 2 inches. After one hour, they were done just right. The flavor was good, but not overpowering. One hour was perfect for THICK chops. I think some of the reviewers that reported dry and overcooked were likely using a thinner chop that would cook faster. We did eat with a side of our favorite bbq. sauce to dip bites into. Oh yes, the chops were very moist. I'll be making again - Thanks!

Cottage Cheese Salad

Reviewed: Aug. 9, 2009
Loved It! Used all the same ingredients but didn't measure anything. The flavors go well together so any proportion that one finds pleasing will work well. Used freshly ground salt & pepper. Healthy, easy and tasty.

Cranberry Cheese Spread

Reviewed: Oct. 26, 2008
Easy, attractivee, tasty. What else can one ask for? Very good as written. Good with or without the almonds, which can get soggy. Was good with Wheat Thins and Ritz brand Honey Butter crackers. It's not often that I make a recipe without changing it, but this one made the cut! Thanks!

Beer Dip I

Reviewed: Oct. 26, 2008
This was easy and tasty. Finely shredded sharp cheddar is a good choice. I add 2-3 green onions, thinly sliced for flavor and appearance. Using 1/2 cup of beer was the perfect consistency IMHO - little stiff straight out of the fridge but after sitting on the buffet table a short time it was the perfect consistency and stayed that way. Was great with any pretzel - regular, honey wheat, butter. Wheat Thins were tasty too. Thanks for a great recipe! I tried something else and it was awful so even happier to find this keeper!

Seasoned Turkey Burgers

Reviewed: Jun. 24, 2008
We really enjoyed the full flavor of this recipe. The only change I made was to cook it as a meatloaf in 9-inch pan at 350 degrees for 45 minutes. Thanks for a keeper!

Fabulous Fajitas

Reviewed: Apr. 28, 2008
I loved these! Things I did different from the original: 1 lb. chicken breast, shredded, 2 minced cloves of garlic sauteed with onions & peppers and 1 & 1/2 pkg. of salad dressing mix (1 pkg. plus approximately 2 teaspoons). I tasted after using just one pkg. and thought it needed more. I will be using this great recipe for years to come. Thanks, APIED!!

Factory Workers Chicken

Reviewed: Jul. 15, 2007
I made this tonight and it was moist and delicious! I used a 2 1/2 lb. bag of boneless skinless chicken breasts, 1 cup mild Pace Chunky Salsa and 1 cup Fat Free Kraft Zesty Italian dressing, marinated overnight in a gallon sealable bag. Discarded marinade and baked for 25 minutes in a foil lined (for EASY cleanup!) 13x9 inch pan @ 375 degrees. The sauce in the pan was wonderful served over rice. If you need or want more sauce just mix equal parts of the Pace and Zesty. I look forward to serving this no-fail easy dish for company.

Easy Italian Chicken II

Reviewed: Jul. 3, 2007
I've made this oodles of times and it's a basic no fail recipe. I do as someone else recommended and pierce the chicken with a fork. I use a 2 1/2 lb. bag of boneless skinless chicken breasts and use enough Kraft Fat Free Caesar Italian to marinate. As someone recommended mushrooms I gave it a try tonight and they were scrumptious! I halved or quartered the big mushrooms and marinated them overnight with the chicken. I cook it in a foil lined 13x9 pan that's also covered with foil for 30 minutes at 375 degrees, remove foil and bake another 10-15 minutes. Since the color is so pale I sometimes sprinkle with paprika. The leftovers are great for all sorts of things like in salads and wraps etc.
