Quick and Easy Brownies

Wow - these taste better than any brownie mix out there. These are very simple to make, with ingredients that I always have on hand...which could be dangerous! They are definitely not low fat with a full cup of butter and 4 eggs, but they are scrumptious! I added white chocolate chips to my mix to give it another dimension and dropped the flour down to 1 cup like other reviewers suggested. You won't be sorry you made these...although your thighs might be!

Okra with Tomatoes

This is SOOOO good! I've made this twice; once straight from the recipe and once with modifications when I was out of some things: halve the cayenne and use salsa instead of stewed tomatoes. I really preferred it with the salsa and will make it that way from now on. You can make a ton of mods to this and it still turns out great. Thanks for the awesome recipe!!

Butter Icing for Cookies

This icing tastes all right, however I simply could not ice fast enough. I had to keep microwaving the icing to make it pliable and sticky again. I'm used to working with shortening or cream cheese frosting bases, so maybe I'm just not familiar enough with this type, but I will not be using this recipe again.

This is always a big hit. Tastes just like the one you find on the salad bar at Ruby Tuesday's. I use a bacon ranch dressing for mine.

Sopapilla Cheesecake Pie

This was SO easy to make and came out really delicious. My husband, who generally doesn't like sweets, couldn'ty get enough of this. FYI - they now make the crescent roll dough in an already rolled out sheets to make preparing this even easier.

Oven Brown Rice

I added some sauteed veggies to this dish and it was really delicious, however it took longer to cook than the recipe called for. Mine came out rather soupy. It was excellent the next day though!

Sarge's EZ Pulled Pork BBQ

The pork turns out well, but too soupy for my taste. I would recommend draining it before shredding. I don't make it this way anymore though, now I just use BBQ sauce and a little bit of root beer and it comes out just as good as this recipe.

These ARE the best! I make these all the time now. FYI - leftovers actually freeze pretty well too, so I keep some on hand to sneak into my son's quesadillas.

These are so good and so good for you too! The waffles come out light, yet crisp. I recommend throwing some frozen blueberries in there too for an added kick.

Guacamole

Fantastic! Just the right blend of spices and I think the cayenne rounds it out perfectly. I've been searching for the perfect guacamole recipe and now my search is over. To stretch it to the second day, cover it with plastic wrap, but be SURE the plastic is right on top of the guac, leaving no air. Then, the next day, simply scrape off the top layer and your guac is good as new:)

Simple Whole Roasted Chicken

This was grrrrreat! I also added a quartered onion to the cavity, but in addition I put a can of chicken broth in the roaster. This really helped keep the chicken moist and made a terrific gravy afterwards. I did everything else according to the recipe. The skin was crispy and nicely browned and the meat was juicy. Excellent recipe.

Baked Ziti I

Wow, what a reception! I made this for a party last weekend & even the Italians were singing my praises! I use my homemade sauce, which has stew meat, crumbled italian sausage, sweet peppers & fresh herbs, which I think makes a pretty significant difference, but I love the provolone & sour cream combination. The sour cream adds just a touch of sweetness. I'm making it again tonight, cause I didn't get enough of a chance to eat at the party...no objections from my hubby!

Baked Omelet Pie

This is a great recipe for feeding a bunch of hungry visitors in the morning. I do make some changes however. I omit the potatoes & substitute a hashbrown crust on the bottom. I also add broccoli & mushrooms & any other veggies on hand. I did need to cook this for almost an hour & to finish it off I broiled it for a couple of minutes, but I also used more eggs. Go crazy & experiment with additional ingredients! Add some dill weed or fresh rosemary for added flavor.
