Maple Salmon

Wow!!! This recipe was incredible!!!! So incredibly simple, and tastes wonderfull. I didn't use the garlic salt, as I thought there would be enough salt with the soy sauce, and the garlic clove had enough flavour by itself. Next time I'll try baking it in foil to reduce clean up - unbelievably making this recipe even simpler!

Yummy, and pretty easy too!! I added one leek as I needed to use it up and also added a can of corn as another person suggested. I didn't have seasoned breadcrumbs, so I added some parmesan cheese, and a sprinkle each of parsley, thyme, basil and garlic powder.

Russian Mushroom and Potato Soup

Very Easy and Very Yummy!!!! I followed some of the tips from others - used sour cream instead of The half and half, and I pureed half of the soup to make it creamier. I also cooked the mushrooms first in the pot, then set them aside while the soup cooked - saved a little on clean up. Why clean two heavy pans when you can get by with one and a small bowl??

Thai Pineapple Chicken Curry

I thought this recipe was great, and pretty easy too. I made a couple of changes: I used 3 chicken breast instead of 2. I used light coconut milk, and only used one can which I found to be plenty. I had concentrated curry paste on hand, and I only used 1 tbsp, but may add a little more next time depending how spicy I want it. Finally I had half a block of extra-firm tofu in the fridge, so I cut that up into small cubes and added it as well. You can probably just toss the chicken add veggies in at the same time to cook, so I'll do that next time.

Mushroom Stuffed Chicken Rollups

Yummy!!! I followed some of the suggestions made by others - added Onion, bread crumbs, veggy bouillion cube and red wine to the stuffing. I added thyme, paprika and black pepper to the bread crumbs. Rolling the chicken is a little tricky, and keeping it together was difficult until I started breaking the toothpicks in half and just tackinghte pieces of chicken closed. I used mushroom soup instead of the cream, and it was worth all the fiddling!!! I will make this one again!!

Feta Chicken

OMG this is so good!!!!! I made a couple of changes, but only because I didn't have exactly what was called for. I used plain feta, and just mixed in some chopped fresh basil, and some chopped sundried tomatoes. I also didn't have Italian-style bread crumbs, so I used plain and added a sprikle of each of the following: garlic powder, thyme, basil, oregano and parsley. I couldn't be bothered to pound out the chicken - I just made a slit in the middle, added the filling, and used toothpicks to pin the edges together before dipping in egg and then the bread crumb mixture.

Erin's Indonesian Chicken

This recipe was really good. I have a small kitchen so I didn't use as many different pans as the recipe stated. I first cooked the chicken, and removed it from the pan. I added the sauce ingredients to the pan to cook, then added the beans and I added some water chestnuts (yum!). I put the chicken back in at the end to re-heat, and absorb some flavour.

Best Lemonade Ever

This is really good and very simple. I followed anothers suggestion to cut the sugar to 1 1/2 cups, and it was just right. Instead of boiling the sugar and water in the saucepan, I added 1 cup of boiling water to the sugar and stired. The sugar dissolved easily.

Oven Stew with Burgundy Wine

mmm, yummy!! I love this recipe just as it is, but after reading some of the reviews I may follow some of the ideas (a little more liquid, add potatoes, mushrooms, onion) I used baby carrots to cut down on chopping. This recipe freezes well.

Quiche Lorraine I

My first ever attemp at a quiche, and it turned out great!! The only changes I made were cooking the onions as others had suggested, and adding some spinach which I had to use up. I had enough for two 9-in pie crusts, so as I live alone I hope it freezes well!!!

Oh so yummy!! It's very simple to make - the most time consuming part is the chopping. I used mild Italian sausage, but I think next time I'll use the hot in order to give this dish a little more zip.

Shepherd's Pie VI

This was very good, and easy to make. I did as some others suggested and added some worshestire sauce. Instead of the cooked carrots I used baby carrots, uncooked but cut into small pieces, and I added some frozen brocolli as well between the meat and the potato. Next time I might add some garlic to the potatoes to add a little extra flavour.

Butternut Squash Soup II

This is an awesome soup. I baked the squash at 375 for an hour as another reviewer had suggested, and other than using baby red potatoes (skin on) I followed the recipe exactly. I found this soup quite tasty, and felt no need to add any other spices as others have indicated. I served it with a simple salad, and 'Easy Baking soda biscuits' (from this site).

Spinach and Mushroom Salad

Very yummy and very easy. The most time consuming bit was removing the stems from the spinach. The next time I make it I might not bother. I didn't have any cider vinegar, so I used regular white vinegar, and I loved it. Next time I probably won't add any salt to the dressing as the bacon contains enough by itself.
