Acapulco Chicken

I was dissapointed with this recipe. I tasted just like any other chicken stir-fry to me. That said I will make it again, but this time I'll add more hot sauce, and maybe some more chili powder. I think this recipe has the potential to be great.

After making the marinade I was REALLY excited becuase it smelled SSOOO good. Unfortunatly, it didn't taste quite as good as it smelled.

Texas Ranch Chicken

I used Swiss cheese as I didn't have mozzerella. The first time I made it I enjoyed it, so I made it again. Stragely enough, I didn't like it the second time. Perhaps third time's a charm?

Lower Fat Banana Bread I

Mmmm, so Good!!!! Really simple to make. I usually add more bananas than called for - probably about 3 bananas worth. Excellent when warm with peanut butter. My favorite breakfast treat.

Baking Powder Biscuits I

Really simple and Really good. Best if served right out of the oven with butter. Just don't make them with baking soda, like I did once when I was rushed and not paying attention. YUCK. :-)

Didn't like this recipe. I think with shortbread I'll have to take the time and make it properly - no shortcuts. Good thing they're only expected around Christmas!!

Pan Sauce Chicken

It was good, but perhaps needed something more. I'll make it again and experiment. To solve the problem of the clumping flour, I added 1/3 of a cup of the hot broth to the flour mixture before adding it to the rest of the broth. Worked wonders - I had no problems.

Maple Salmon

Wow!!! This recipe was incredible!!!! So incredibly simple, and tastes wonderfull. I didn't use the garlic salt, as I thought there would be enough salt with the soy sauce, and the garlic clove had enough flavour by itself. Next time I'll try baking it in foil to reduce clean up - unbelievably making this recipe even simpler!

Chicken with Tomato, Orange and Rosemary Couscous

Pretty good. The flavoured couscous this recipe calls for is unavailable here, so I ccoked one clovee of garlic in about 1.5 tbsp. of olive oil before I added the white wine and water.
