Unbelievable Spinach Calzones

I really waned to like these, but I found them nothing special. I made them using the whole wheat and honey pizza dough recipe from this site instead of the canned dough the recipe calls for, but I doubt it made that much difference. I don't think I'll make these again.

Omelet in a Bag

This sounded a little odd to me when I first saw it, but I'm so glad that I gave it a shot!!! This is the easiest recipe, and the results are wonderful. I used a coffee mug to hold open the bag as some others had suggested, used three egg whites instead of the two whole eggs, and then just threw in what I had in the fridge which included: some baby tomatoes, one clove crushed garlic, red pepper, some broccoli, a sprinkle of dried oregano, and a little parmesan cheese. When it was cooked, I spread some Salsa on a whole wheat wrap, and rolled the omelet up in it. Yum ;o)

Delicious Ham and Potato Soup

Wow this was good. I only changed two things - I didn't add any extra salt, which I found wasn't needed and I added couple of green onions as they were in my fridge. I found that the milk mixture took about 10 minutes to thicken - longer than described in the recipe, but I'm wondering if it's because I used skim milk instead of regular. Anyways, the recipe turned out wonderfully.

Butternut Squash Soup II

This is an awesome soup. I baked the squash at 375 for an hour as another reviewer had suggested, and other than using baby red potatoes (skin on) I followed the recipe exactly. I found this soup quite tasty, and felt no need to add any other spices as others have indicated. I served it with a simple salad, and 'Easy Baking soda biscuits' (from this site).

Brazilian Black Bean Stew

Oh so yummy!! It's very simple to make - the most time consuming part is the chopping. I used mild Italian sausage, but I think next time I'll use the hot in order to give this dish a little more zip.

Spinach and Potato Frittata

I liked this, although I think I went a little heavy with the potatoes. I put this under the broiler for a few minutes to finish cooking the egg on top, and give it a nice golden-brown colour.

Penne Pasta with Spinach and Bacon

This was quite good, and really easy. I didn't use any olive oil to cook the bacon as the bacon I had was quite fatty. After I cooked the bacon I drained off the fat, but next time I may leave a little behind just to add flavour to the sauce.

Curried Coconut Chicken

This recipe was dissapointing. I thoughwith allthe curry powder I added it would be spicier, but all it did was make my house smell like curry for days. I doubt I'll make this again.
