Barbequed Steelhead Trout

Surprisingly delicious! Steelhead Trout is on sale here in Palm Springs pretty regularly too, so will definitely be making this often. Can't tell you how much we enjoyed it. Thanks so much for sharing, zeppelin68!

Chicken and Gnocchi Soup

We truly enjoyed this, but just felt it needed a little something, so added some freshly snipped basil, a bit of thyme, a touch of red pepper flakes and a handful of Parm. Didn't add the cornstarch. Will definitely make again, and thanks Christina!

Eggplant Parmesan II

I used two small eggplants for three people, yet we still had enough for a second meal with spaghetti. Instead of the egg, I opted for brushing my sliced and sweated eggplant with EVOO, then coating with the Italian breadcrumbs (a cup or so is enough!) to which I added a Tbsp. each garlic powder, basil and Italian Seasoning, then with about a quarter cup Parm Cheese. I chose Paul Newman's Sockaroonie Sauce for this particular recipe, and although it was a bit thick (easily rectified) it was tasty! I found it necessary to cook the eggplant slices for more like 10 minutes each side. I was surprised by how good this recipe was in the end...

Mango-licious Tilapia

This was very good! I left out the salt, added a diced red bell pepper and about a clove of minced garlic and used a bit less of the mango and red onion. I prepared the salsa early in the day so the flavors had a chance to blend, adding the diced avocado about 30 minutes before serving. Marinated the Tilapia for a couple of hours in the OJ and Zest. Served with Refried Beans, Sweet Corn Cake and some rice I had leftover from the night before. Family truly enjoyed, and thanks!

Quick Shrimp Lo Mein

Very tasty! I doubled the sauce ingredients, tripled the garlic, added scallions, used snow pea pods instead of snap peas and red bell peppers as opposed to green. Served over 2 pckg. Yakisoba noodles (tossed with sesame oil) and spring rolls. Would make again!

Chef John's Beef Goulash

Absolutely delicious! I added about half a green pepper, diced and sauteed along with the onion, which I had seen in other Goulash recipes. Went light on the cayenne pepper. (Chef John's nothing without his red pepper!) This was simple, delectable and even better the next day. Served over buttered egg noodles. Will make again! Thanks Chef John! Highly recommended, and I would encourage the grinding of the caraway along with the use of fresh marjoram if at all possible.

Easy Broccoli Quiche

This turned out great after following some of the reviews. I used fresh broccoli, added fresh mushrooms and red bell pepper, used a combo of mozzarella and sharp cheddar, 3 eggs, a cup of half & half, lots of fresh cracked black pepper and the recipe for Flaky Butter Pie Crust (on this site) in an 8x8 deep dish... I think it took about 40 minutes to set, and was absolutely delicious! A tad eggy... could have been a bit more custardy, but that's easily rectified! LOVE this recipe, with the crust! Thanks!

Butter Flaky Pie Crust

I refrigerated for approximately 2 hours. I was extremely impressed by the delicious flavor, flakiness and ease of preparation with this recipe! Thank you so much, as it's just a wonderful accompaniment to any quiche recipe, and I will use it often!

Liam's Dip

I was looking for a little something else to add to Hub's Superbowl tray ~ I only had half the cream cheese, but I forged ahead anyway, adding a handful or two of shredded Mexican cheese and a dollop of sour cream. Used Hormel Hot Chili with Beans. Sorry for all the tweaking to your original recipe Barb, but thanks for the idea, and he's a happy man! Served with Frito's Scoops.

Quick and Easy Black Bean Soup

I have to admit... I didn't have Sambal Paste, so I used Chili Garlic Sauce. Still, this was one of my Mom's favorite lunches! Hubby and I also enjoyed. I garnished with green onions and nobody asked for sour cream here. Thanks Chef John... a recipe we can all agree on gets a 5*~

Catherine's Spicy Chicken Soup

Another yummy soup recipe from AR, which I love all the more because I always have the ingredients on hand! I use low sodium chicken broth in lieu of the water and cubes, omitted the can of whole tomatoes, added about a tsp. of cumin and a few shakes of oregano and served with tri-colored tortilla strips, shredded Mexican blend cheese and a dollop of sour cream on top. This was great with some honey cornbread on the side! We'll certainly be eating this one more often. Thanks, ANTtAFF

Gramma Brown's Corn Chowder

This chowder was just amazing! I basically followed the recipe, but added a small diced red pepper and a couple cloves minced garlic to the onion/celery saute. I used condensed milk (1 can)in lieu of the milk, added a Tbsp. chopped fresh thyme and garnished with the bacon and some chopped scallions. With only 3 of us eating, we each had 2 nice bowls with dinner and I was more than pleased to still have 3 servings left for the next day's lunch. Thank you Halle Hardin ~ and you to, Gramma Brown!

Salmon Chowder

This was truly a hit with my family! I used fresh salmon (just cut in chunks and add to the simmer), fresh garlic, shredded carrot ( a handful, which I added to the saute), double the dill and added about 1/2 cup white wine, basil, parsley and chives. Used a Mexican blend cheese (1 cup) and served with Cheddar Bay biscuits and a salad. Definitely plan on making this meal again. Leftovers were delicious as well. Thank you KENULIA.

Cheddar Bay Biscuits

These biscuits are so yum! I cut the recipe in half, and for the dough I used 1 cup shredded Mexican blend cheese, 1 tsp. garlic powder, 1/4 tsp. onion powder and 1/4 tsp. Italian seasoning. Baked at 400 for 10 minutes, then brushed with the 1/4 cup melted butter and 1/2 tsp. each garlic powder and parsley. Popped back in the oven for 2 minutes. Hubby ate half of these right out of the oven and I have orders to make these much more often from him and my Mom. A total keeper! Thanks for the recipe Cookie.

Spicy Chicken and Sweet Potato Stew

This was pretty good. I had typed in to the ingredient search chicken, sweet potatoes and cilantro and this is what came up. I did use Swanson's chicken broth in place of the water,added a few shakes of Ancho Chile Powder and a generous squirt of lime juice to each serving. While I'm not big on sweet potatoes in general, I did enjoy this recipe. Very Tex-Mex tasting, hearty and flavorful, and for us, something new and interesting to do with leftover Rotisserie chicken. Served with cornbread and shredded Mexican blend cheese for topping.

Fruity Curry Chicken Salad

I used half the curry, seedless red grapes, a Fuji apple, craisins and toasted walnuts. Delicious combination of flavors. Can hardly wait to try the leftovers tomorrow! Am thinking next time I will use more curry... YUM!
