Rollatini with Pork and Rosemary Filling

Reviewed: Sep. 25, 2004
Although they're not a snap to make, these chicken breasts are a nice change from ordinary chicken breast dishes. I think next time I will try tying them together with kitchen string instead of using toothpicks -- might help them stay together better. All in all, it makes really nice "fancy" chicken dish. Be sure to get them nice and browned on the outside to assure that the inner chicken meat is fully cooked...I had to nuke mine an extra minute after cutting it open to find slightly raw chicken inside.

This was easy and delicious! The combination of rosemary, balsamic vinegar, and marmalade is wonderful.

Quinoa and Black Beans

Reviewed: Apr. 25, 2003
Delicious, nutritious, and easy to make. You can't go wrong with this one! Add a little salsa, top with zingy shredded cheese and bake it up for a nice casserole, too.

Brussels Sprouts and Chestnuts

Reviewed: Jan. 16, 2003
I'm a big fan of brussels sprouts, so I'm always looking for different ways to prepare them. This was delicious! Now, if only I could get my husband to eat them!

Spiced Pumpkin Seeds

Reviewed: Oct. 29, 2002
Very tasty...I doubled the amount of garlic salt and used canola oil instead of margarine.

Almond Lemon Chicken

Reviewed: Oct. 29, 2002
I thought this dish was very delicious...I've made several lemon chicken recipes before, but never one with orange marmalade and red pepper, which really made everything tastier. I used less olive oil than called for (probably just 2 tablespoons), and skipped the butter altogher. Serve with steamed broccoli and brown or wild rice for a delicious, balanced meal!

Fresh Pear Cake

Reviewed: Oct. 28, 2002
This is a wonderful cake. I didn't change a thing in the recipe, although I used Asian pears. It came out moist yet light, and truly delicious. I'll make it again for sure!

Rich and Creamy Roasted Eggplant Soup

Reviewed: Sep. 3, 2002
Holy smokes, this one's a winner! I made a few changes -- used water instead of chicken broth, added a tablespoon of chopped fresh rosemary, and added a clove of pressed garlic just before serving. I used half and half instead of cream, but it was still deliciously rich. I can't wait to serve this one to company!

Washabinaros Chili

Reviewed: Apr. 22, 2002
This chili rocks! The wasabi, sausage, and multiple kinds of peppers really add depth of flavor. I always substitute ground beef with 2 cups of texturized vegetable protein (TVP) to make it a little healthier (add 2 extra cups of liquid if you try this). The beer I used was perfect for the recipe, too: Alaskan Brewery's Smoked Porter - they smoke the malt with alderwood before brewing...try it if you can find it. This will be added to my growing arsenal of awesome chili recipes from allrecipes...thanks Aaron! Deee--LISH

Green Curry Tofu

Reviewed: Apr. 18, 2002
This is a wonderful dish. I especially liked the idea of stir-frying with sesame oil - it really adds depth of flavor. I also added broccoli to the stir-fry, used lite coconut milk, and served over steamed short-grain brown rice. Delicious!

Easy Red Beans and Rice

Reviewed: Mar. 14, 2002
This is a delicious (if less than authentic) dish! I added jalapenos and a few shakes of Tobasco to give it some kick, and served over steamed short-grain brown and wild rice...my hubbie and I loved it!

Jamaican Me Crazy Chili

Reviewed: Feb. 12, 2002
This chili is really good, although it definitely needed spicing up! I added a minced habanero pepper, which gave it the needed zip. I also used texturized vegetable protein instead of ground beef to get the same texture as meat chili without all the saturated fat. I'll make this one again!

Quinoa Tabbouleh

Reviewed: Jan. 14, 2002
This is a great recipe, and a nice twist on traditional bulgar tabbouleh. The quinoa gives it a very nice texture, and the addition of shredded carrots gives it some sweetness, which complements the lemony tang. I used half the olive oil to lower the calorie count a little. I'll make this one again!

Pumpkin-Sausage Tarts

Reviewed: Nov. 26, 2001
These were really unusual and tasty...a great combination of sweet and savory! I didn't have time to make the pastry (though I'm sure it would be even better that way), so I used frozen phyllo mini tart shells. Everyone devoured them at my party.

Baked Ham with Fresh Pineapple Salsa

This is a great combination--baked ham with pineapple takes on a whole new meaning. I loved the spicy kick of the salsa, and the sweetness of the fruits compliment the salty ham. Mmmmmm....

Cincinnati Chili I

Reviewed: Aug. 2, 2001
The only thing that prevents this from being authentic Cincinnati chili is that it tastes WAY BETTER than anything you get in the chili parlors! This is absolutely delicious, and you MUST try it 'Cincinnati' style: served over spaghetti and topped with grated cheddar cheese. We call it a three-way in Cincinnati. You'll call it your new best friend.

Watermelon Margaritas

Reviewed: Jul. 18, 2001
These margaritas were awesome! I just happened to have some frozen watermelon cubes, so I was very pleased to come across this recipe. I used Chambord liqueur instead of triple sec, since I had that on hand. Sweet and delicious! Great for a summer party!
