Budin (Puerto Rican Bread Pudding)

By far this is the best I've tried. I've been making this quite a few times for almost 2yrs now. My husband is from PR and budin is his favorite. He's been wanting some for a long time and I have tried couple of recipes until I came across this one...HE LOVES it.

Awesome and Easy Creamy Corn Casserole

My 6 and 3 year old boys love this. My husband who doesn't like sweet food and he said they were quite good. I'm going to make it again soon for my kids just to much.

Clone of a Cinnabon

I like the gooy drippings so I made extra on the stovetop by melting everything together plus some pecans and drizzled it over freshly baked cinnamon rolls. Frosting was SOOO GOOD! I must say it taste better than what you would buy at a store.

D's Famous Salsa

Do not use canned stewed tomotoes if you want the home made mexican salsa taste. I used Hunts canned stwed tomatoes and it was too sweet for my taste. But I like the idea of using green chillis so thanks for giving me that idea.

African-Style Oxtail Stew

It's a keeper. My husband doesn't like celery so I had to omit that but still it was very tasteful. I love oxtail and I usually make soup out of it but since my husband isn't into soups, I made this stew. I served it with my famous basmati rice and lentil with cumin seeds and he loved it.

Sesame Pasta Chicken Salad

It was wonderful. For me, it tasted better the next day. I had to cut the recipe to 1/4. I didn't have rice vinegar so I just added few drops of distilled white vinegar. I also added some crushed red pepper just because I like it semi-hot. I'm going to make this next time when I go to a picnic or a pot luck.

Tres Leches (Milk Cake)

It was awesome. I've always ordered tres leches for birthdays and now I know how to make one. Thanks. I didn't change the recipe a bit except I didn't use all milk mixture since I don't like my tres leches to be drowning in milk. Also, I used the marshmallow frosting instead.

Strawberry Marshmallow Frosting

It was really good especially on tres-leches cake because the cake itself is rich. The frosting is sweet but not too sweet and I used sugar free strawberry gelatin and it came out great. I'm using that again on my tres-leches cake.

Birthday Bones

The dogs loved it. I made it for X-mas and passed them out as gifts to people who have dogs and it was awesome. My 3 year old ate it by accident and he thought they were great too.

Spanish Flan

Finally found a flan recipe that my husband loves. He said it's better than his mom's and better than most people's he had tasted. If I'm going to make regular flan, this is it. The firt time I made it, I used water bath and used 4 eggs. The second time, I used 4 eggs but baked it as recipe suggested and it did't come out as smooth and it was flat. Will never bake flan without water bath again.

Artichoke & Spinach Dip Restaurant Style

I made this for a get together at my husband's uncle's house it was a hit. I was kind of skeptical since they are more into Hispanic flavor foods but it was a hit when a group of people who are into "American" food showed up. I used the whole 8 oz. of cream cheese and it was very creamy.

Cajun Appetizer Meatballs

I made this for office Christmas party and I went home with an empty pot. There were a lot of food left over but mine was gone in the first round. People were going up for second only there were none left and I made 2 lbs for 10 people at a pot luck. I only used 1 tbls. of cajun seasoning for each batch since it's too salty. I also used Masquite BBQ sauce. I cooked the meatballs the night before and kept the sauce mix separate. The next day I mixed the sauce in and kept it warm in a crockpot few hours before the party.

Sweet Dinner Rolls

Awesome. I don't have a bread machine so I heated the water and milk in the microwave for one minute on high, put the yeast in for 10-15 minutes until the mixture started to foam on top. I then mixed all the ingredients together and knead the dough until smooth and let it stand in room temp. for 1 hr. Punch the dough and knead for a minute and rolled them into 14-16 balls and let it rise for 1 hr and baked them in the oven for 15 minutes at 400 degree. I ended up making three batches for dinner party of 12 people because every time I pull a tray out of the oven, they were gone. I messed up my first batch up by adding the rest of the butter last because I decided make simple rolls and still it came out very fluffy. I think that was my best batch.
