Thai Grilled Beef Salad

Pad Thai

Too starchy at first. Improived a lot when I doubled the sauce, peanuts, and onions and halved the noodles. Now it's great.

Thai Pineapple Chicken Curry

I've never tried Thai before, and this came out amazingly well. As previous posters have suggested, I used about 2 tbsp of curry paste. I also cut down the coconut milk to about 19 oz (1.5 cans) -- not a fan of coconut soup. I made it a week ago and my wife is already asking for it again. Great recipe; easy to follow; and most ingredients are easy to come by (at least in CA.)

Cherry Chicken Lettuce Wraps

Fairly time consuming recipe; lots of chopping of ingredients just takes time. I used plums and walnuts instead of cherries and almonds. My wife absolutely loved the results -- left me a little underwhelmed. Rating is based on her taste, not mine.

Turkey Enchiladas

I used Costco carnitas instead of turkey, and taco-size flour tortillas. I threw about half the enchalada sauce into the filling as well, just for seasoning. Since there was less sauce in the dish now, I covered it before cooking. Came out great. Rarely do my wife and I agree on meals, but this one is good.
