Baked Garden Ratatouille

Reviewed: Aug. 11, 2013
It was pretty good after adding a lot more seasoning both on the chicken and again on the veggies.

Tartar Sauce I

Reviewed: Jun. 7, 2011
Realized at the last minute I didn't have any tartar sauce. Made this and it was great. I added a little more relish and onion powder rather than onion. Letting it sit a bit would really help to combine the flavors.

Tater Tot Casserole III

Reviewed: May 14, 2011
I just made this again and threw in what I had - it was even better than before. 3/4 lb ground meat, heaping tsp garlic, red bell pepper, celery, onion and a good dash of garlic salt. After cooking that up I added the soup and milk, stirred and put into a casserole dish. Topped it with frozen mixed veggies then cheese. At this point I put it in the fridge for the day - overnight would have been fine. Later I cooked it covered about 30 min then put on as many tater tots as looked right and cooked uncovered another 30 minutes until the potatoes were done. Very good and filling on a cold night and I really like make ahead stuff. Great dish Drew and thanks to "something different again?!" for posting the picture that made me think of mixed veggies and cheese.

Sweet and Sour Chicken I

Reviewed: Mar. 10, 2011
The last rating by smudson inspired me to try a real short cut. I barely defrosted 2 frozen chicken breasts, diced and tossed with olive oil, garlic salt and a dash of worcestshire (I was out of soy). In another bowl I diced baby carrots a medium bell pepper and added about 12 oz chunk pineapple, drained. Cooked the chicken a little then put in a bowl to the side. Cooked the the veggie mixture about 10 minutes, added 1 bottle of Kikoman sweet and sour, put the chicken back in and simmered until done. (about 10 minutes). Served over rice - fabulous!

Cream Cheese Penguins

Reviewed: Dec. 31, 2010
Really fun and went together easier and quicker than I expected. The feet were perfect with just a little wedge cut out of a slice of small carrot - they all stood up. Used cutout portion to make the nose. For me the cream cheese baggie was way more trouble than just smoothing with a finger and then wiping any excess off during assembly. Made them the evening prior to our dinner and left uncovered in fridge overnight - were still perfect. As others said, not terribly tasty but so cute that they got their pix taken many times and I got rave reviews! Thanks for the great idea.

Lemon Chicken and Rice

Reviewed: Jul. 29, 2008
A really good, easy, quick meal. Mom raved about it, my husband and I enjoyed it too. My only change was to use instant brown rice so I adjusted the cooking time, but came out perfect. Next time I would add a few more vegetables.

Chicken Fried Steak III

Reviewed: Apr. 1, 2008
Made this last night and Mom & hubby loved it. I thought it was just okay but who can resist rave reviews. I followed others suggestions and skipped the cayenne and chili and dredged the meat in seasoned flour, egg and flour again. Even though I decreased the flour, the gravy was still thick as glue so keep a little liquid handy for thinning. I was out of potatoes but they loved the gravy over rice. Thx for submitting this one Gail.

Mini Crescent Dogs

Reviewed: Nov. 24, 2007
My girlfriend served these recently and they were a big hit. She made them the week before, cooled then froze them in a plastic baggie then just popped in the oven to warm up. I love things I can make ahead

Amish Macaroni Salad

Reviewed: Aug. 25, 2007
Like all of us, I've made a lot of macaroni salad, but no one ever raved about my recipe before I tried this one. I used light mayo, sweet relish, green or red peppers, apple cider vinegar, and even skipped the celery once for someone who had an aversion - came out great every time! Thanks...

Easy and Elegant Pork Tenderloin

Reviewed: Aug. 25, 2007
This one is just as easy and yummy as everyone says. I have no idea how they get the crumbs so thick, but thinner works great - just don't add extra to cover any bare spots or you'll have little dry spots. Be sure to tent the meat (maybe even cover it part of the time) to keep it from getting a bit dry. Serving gravy with it is really good!

This one hardly needs another great review, but my guests really gobbled it up. Be sure to use a glass bowl because it shows off beautifully.

Carla's Fruit Dip

Reviewed: Aug. 25, 2007
Everyone loved it. I made a full batch and froze half (with plastic wrap pushed down tight on top and then sealing). It defrosted perfectly and this crowd loved it as much on chips as on fruit. Thanks for the great recipe.

Fresh Fig Cookies

Reviewed: Aug. 25, 2007
Wow, what a great way to use up fresh figs. Our tree is so prolific and these cookies are always a treat. Even people who don't like figs taste a fresh fruit flavor that is very mild and just love them. Thanks!

Strawberries and Cream Bread Pudding

Reviewed: Aug. 25, 2007
As good luck would have it, I decided to use up an some fresh fruit and we had unexpected company stop by while this was in the oven. It came out almost perfect. I used white sandwich rolls which I left out to dry for two hours; I cut the sugar to 3 heaping tbsp and increased the strawberries to just over a cup. I let the whole thing soak for 20 minutes before cooking. I got rave reviews but we agreed that adding a little cinnamon &/or cloves or using cinnamon raisin bread would have given it that extra punch. All in all, a great recipe. Thanks!

Hot Artichoke and Spinach Dip II

Reviewed: Feb. 7, 2007
I took this to a Super Bowl party and it disappeared. Thanks to Summer821, I added the mozzarella during the last 5 minutes of cooking and it did not get too hard during transporting but was still perfectly melted.

Buffalo Chicken Dip

Reviewed: Feb. 7, 2007
I made this for Super Bowl and got the rave reviews I hoped for. Like others, I omitted the cheddar cheese, skipped the skillet part and used a roasted chicken. I topped it with diced green onion to hide the "ugly" look that many described.
