My family and I LOVED this soup! I cut down the olive oil to 1 tablespoon. I also used all chicken broth for the liquid instead of half broth, half water. I served it with grilled Italian sausages (for those who wanted some meat with their meal) and garlic bread. Super healthy, hearty, and satisfying! :)

Pumpkin Chocolate Chip Muffins

These were very tasty! I doubled the recipe to make 24 muffins. Subbed 3 teaspoons of pumpkin pie spice for the cloves, cinnamon, and nutmeg. It was perfect! Also, I dusted the chocolate chips with a little bit of flour before mixing them in. This helps them stay suspended in the batter better, and not sink to the bottom of the muffins. Worked out great! :-)

Pumpkin Crumb Cake

Made this last night exactly as written, and it was DEVOURED by my sons within an hour. I had a little bit, and it was delicious! So easy to put together too....I'll be making this again, for sure! :)

Chicken Stew With Coconut Milk

This was sooo yummy! I did it on the stovetop, browning the chicken first. I was a little afraid of the lima beans, but they were perfect in this dish. Everyone loved it! :-)

Sweet Restaurant Slaw

I had half a head of cabbage in the fridge that I wanted to use up, so I decided to make this slaw. To the shredded cabbage, I added 2 big handfuls of shredded carrot (I had a bag of pre-shredded in the fridge). I also upped the onion to 4 tablespoons. I made the dressing exactly as directed, except I subbed celery seeds for the poppy seeds, and added plenty of freshly cracked black pepper. It is absolutely delicious, and definitely as good, if not better, than what you would get in a restaurant! Sweet, crunchy, and creamy....YUM!! :)

Cindi's Egg Rolls

These are soooo yummy! I used ground chicken, and added about 1/2 tsp. of chinese 5 spice and some soy sauce to the meat while it cooked. I also added a bit of soy sauce to the veggies while they were stir-frying. Best egg rolls ever! Thanks, Cindi! :)

Tortellini Bacon Broccoli Salad

This was yummy! I read some other reviews that said they didn't use all the dressing called for....I'm not sure how that's possible. I put in twice the amount, and the salad sucked it right up! It ended up being a little dry (I made it the day before), but still delicious. Next time, I'll make sure to have extra dressing on hand to mix in right before serving.

Southwestern Pasta Salad

This is the BEST pasta salad ever! I have made it twice now. The first time, I mixed in some freshly shredded sharp cheddar cheese. I left it out the second time, only because it was being served to someone who is lactose intolerant. It was absolutely delicious either way! The cilantro and the lime add such freshness and lightness...don't skimp on the lime juice! One more thing...Use any fresh (not canned)tomatoes you have on hand. It doesn't matter, it will come out delicious! This is a recipe I will use for life! :)

Hearty Vegetable Lasagna

Love, love, LOVE it! I followed the directions, except I added some diced zucchini and shredded carrot to the sauce (sauteed them with the rest of the veggies first). I also added a box of defrosted, thoroughly drained chopped spinach to the ricotta mixture. So yummy, and a GREAT way to get the kids (and grownups!) to eat their vegetables! :)

Flatlander Chili

Best ever chili, hands down! I did what many reviewers suggested by using tomato sauce instead of juice, and petite diced tomatoes instead of sauce. I've made it several times, and it's always a hit. I even won a family cook-off with this recipe! All of the ingredients are in perfect proportion, and you just can't go wrong as long as you stick to the instructions. Thanks for a wonderful chili recipe! :)

Whit's Chicken Enchiladas

Made exactly per the recipe, and they were pretty yummy. They are very rich and cheesy, so a little goes a long way. The only reason I gave it 4 stars is because I feel they could have used a little spice. Next time I make them, I'll add cumin and chili powder to the cheese sauce, and I won't remove all of the seeds from the jalapeno peppers, as this dish would definitely benefit from a little heat. All in all, good dish!

Cabbage and Smoked Sausage Pasta

My husband, brother, and I liked this a lot. My normally not-picky kids ate it, but weren't crazy about it. There's definitely way too much butter/oil going on, so it gets a little on the heavy side after a few bites. I added red peppers and vidalia onions to mine to compliment the smoked sausage, which added color and flavor. I would have given it 5 stars if I'd listened to other reviewers and decreased the butter and oil.

This is so yummy! The only change I made was to add 1 tablespoon of cinnamon to the batter. Don't worry about how thick the batter is...Just follow the recipe and you won't be sorry! :)

Steak Sauce

This steak sauce came together in a flash, and was DELICIOUS to boot. I'm a huge fan of A1, but it just cannot beat this homemade sauce, even though it's made with simple ingredients. My kids and I couldn't get enough of it! My husband liked it too ...:) Thanks for this amazingly amazing recipe!

Spiced Butternut Squash Muffins

These were great! I had some butternut squash leftover from Thanksgiving, so I decided to try this recipe, and I'm so glad I did! I followed the directions exactly, but I did drizzle a very easy icing over the tops once they were cool (1 cup of confectioners sugar mixed with 2 tablespoons of milk and 1/4 teaspoon of vanilla). The icing was perfect with them, since the muffins aren't overly sweet. My whole family really enjoyed them! Thanks for a great recipe!

Slow Cooker Stuffing

This stuffing came out awesome! I made it even easier to prepare doing the following: I used 2 16 oz. boxes of Bell's original stuffing mix, and I omitted the dry spices/seasonings (they were already in the stuffing mix). I also sauteed my veggies in the butter the night before, and tossed them together with the stuffing mix in a large bowl. I refrigerated that overnight. Thanksgiving morning, I mixed in the eggs and about 4 cups of chicken broth, put everything in the crock pot, and cooked it on low for about 5 hours. It was perfect, and everyone loved it! Thanks for a great recipe!

Country-Style Chicken

This chicken was so good! It was DEVOURED by my husband, 4 kids, and myself. It was so quick and easy to throw together, and extremely flavorful and moist. I didn't change a thing, and this recipe is definitely going into our rotation! Thanks!
