Swedish Nut Bars

Reviewed: Jun. 21, 2008
Super easy and yummy! I agree that it is more of a cake-like consistency, though. It is great to find a gluten-free dessert that was originally that way. I loved having the almonds throughout the cake, it gave it a lot of texture. I might add cinnamon or cloves next time. This is open to a lot of variation and add-ons.

Black Treacle Scones

These were okay. I ate them, but they were very, very dry and not very flavorful. You definitely need something to drink with these.

Sweet Irish Bread

Reviewed: Jul. 19, 2007
Yummy Yummy Yummy This was great. I used the Splenda baking blend and my family can't get enough of it. I don't bother sifting the ingredients; I just use a fork to stir. I've sifted and I can't tell a difference. It's a little time consuming, but definitely worth it.

Apple-Cranberry Crisp

Reviewed: Jun. 9, 2007
This is great. It's really good for breakfast with a glass of milk and REALLY good warm with vanilla ice cream. I made this with Splenda baking blend.

Oatmeal Soup

Reviewed: Jul. 21, 2006
Very good! I scaled mine down to 1 serving, and added ham. The ham made it absolutely wonderful. Since I used skim milk, I drizzled some half-and-half over it. Very rich tasting, and although it looked like a small serving in the bowl, it was more than enough, and lasted all morning. The only downside was that it took me 30 minutes to make it.

Eggless Whole Wheat Muffins

Reviewed: Jul. 18, 2006
These muffins were fantastic! The batter was a bit dry, but a little milk fixed that. By themselves, they have very little taste (to me), but they are one of those foods that once you add a little bit of jam or something, the taste comes out. These reminded me of a recipe I've had that was like authentic British cakes, except this is a whole-wheat version.
