Janet's Rich Banana Bread

With a few slight changes, this was the best banana bread I have ever tasted! First of all, do use room temp real butter and cream it with the sugar. Also, make sure your eggs are room temp. Sift the dry ingredients together and add 1tsp. cinnamon and 1/2tsp. nutmeg. Also make sure you use a full cup of MASHED bananas. With these modifications, you will have the best banana bread on the planet :)

Pecan Nut Crust

Okay, first of all if you are debating whether to try this...DO IT!! It is so good. I pulsed my pecans in my food processer until they were broken up but not completely ground. I used the amounts called for with everything except the butter. I just added enough to moisten the crust, but not drench it. The nuts have natural oils that come out during baking. Don't forget to refridgerated this before baking, because it really helps hold it together. I used this for a cheesecake recipe, and let me tell you, it got RAVE reviews!! And the best part is, that there is no flour and so it is gluten free...perfect for my mother in law with celiac. Thanks for the awesome recipe!!

Microwave Baked Potato

Wow..who would have thought a microwaved potatoe could be so delicious. I was pleasently surprised by this simple recipe. I did wrap mine in plastic wrap and microwaved four minutes on each side. Then I took them out, split them down the middle and put butter and cheese on them. Then I microwaved for another 45 seconds. TASTY!!!!

Orange Poppy Muffins

These muffins are very similar to the ones my Grandmother used to make when I was a child. She however did not use the orange butter, but instead used an orange glaze of squeezed orange juice and powdered sugar drizzled over the warm muffins. It soaks in and then slightly hardens on top. Delicious!!

Neiman Marcus Cake II

First of all, do not even think about icing this "cake". It is more of a bar, and sweet enough to stand on it's own. I used about 12 ounces of cream cheese and 2 cups of sifted powdered sugar and it was delicious. My husband really liked it. Great with black coffee.

Jam Filled Butter Cookies

MELT IN YOUR MOUTH DELICIOSO!! I made these cookies just as the recipe called for. I did refridgerate the dough while the oven was preheating and then rolled them into balls and placed them on the cookie sheet. I noticed that it did help to wet your thumb before indenting the cookies so it would make a better place for the filling. I used raspberry preserves. I baked them for just 8 minutes and then dusted them with powdered sugar while they were still warm! These were a huge hit with my husband and my two small children!! Thanks for the recipe!

Slow Cooker Split Pea Sausage Soup

After reading reviews about the soup being too thin. I took others advice and added only 5 cups of water and 1 cup of milk. I also added about 4 small potatoes cubed, a few chopped carrots and a whole onion. After about 4 hours, the peas had completely disinigrated so I added another half a bag and a little more water and let it cook an hour on low. Yummy! The disinigrated peas made a great base for a thick soup, while the firmer peas added some substance. I added a little extra salt and pepper at the end and this soup was amazing. The sausage gave it a great flavor and it was very filling.

Easy Meatloaf

This was so easy and economical. I added fresh garlic but otherwise followed the recipe exactly. It was full of flavor and stuck together very nicely. Will make again.
