Best Ever Banana Bread

I'm glad I waited before I reviewed this. Right out of the oven and this just tastes pretty plain, but the next day!! WOW! What a difference and soooooo yummy! I did make a few simple changes. Used cinnamon applesauce in place of the vegetable oil. Added 1 tsp vanilla, a 1/4 tsp cinnamon and walnuts instead of pecans. Oh, I also took other reviewers advice and used 1/2 cup brown sugar and 1/2 cup white sugar and even with just one cup it was still plenty sweet! I would NOT use 1 1/2. I've made banana bread often for my co-workers and one made the comment, "This is the best banana bread you've ever made. So moist and tastey!" I think I'll keep this one since it was much simplier than my previous recipe and taste so much yummier the next day!

Easy Chicken Enchiladas

Made some slight adjustments. Used half the sour cream. Only 3 cups of Mexican blend cheese. Cooked the chicken in the crockpot for 2 hours on high with a can of chicken broth, a teaspoon of garlic and 4 chopped green onions. Also used corn tortillas and red enchilada sauce. Two teenage girls loved it. Was my first time making them.

Awesome Slow Cooker Pot Roast

My 16 year old daughter LOVED this!! I did make one substitute - beef broth for the water. I used a 2lb Chuck Roast since we do not have a huge family to feed! I used the 2 cans of COM, 1/2 pack of the onion soup mix. I did NOT sear the meat as this is completely unnecessary. It actually is a myth that doing this holds in any flavor, so I wouldn't waste my time. The only other change I will make next time is using a low sodium broth as this was a bit too salty for me.

Grilled Asparagus

Yummy!!! So simple and yet oh so tasty! My bf grilled the asparagus and I steamed some... we ate his before the rest of dinner was even finished cooking! Yes, it's simple, but the grill gives it some flavor and crisp!

Slow Cooker BBQ Chicken

I gave it only 4 stars because I made some adjustments. Instead of using syrup I used a 1/4 C brown sugar. I did not have any Chili powder or Cayenne pepper. I used a little more than two dashes of Hot sauce to make up for the missing ingredients. I put this in the crockpot on high for 3 1/2 hours, which was about a twenty minutes to a half hour too long on high because the edges started burning. However, what I was able to salvage, which was a rather large part of it, was delicious! This is a keeper for me.

Chewy Peanut Butter Chocolate Chip Cookies

While I thought these were just "ok", everyone at work thought they were absolutely delicious. I did change 4 things... I added a full cup of peanut butter because a half cup didn't seem like very much and I used chopped walnuts. The other two changes weren't exactly to the recipe. I reduced the oven temp to 350 because 375 was too hot and I used just a tablespoon to drop the cookies and not a 1/4 cup. They would have been huge! The comments I received were that it was just the right amount of peanut butter, not too over powering. My boss said that between the amount of chocolate and peanut butter, it was a balance so it wasn't too peanut buttery or too chocolatey. I'll keep this recipe for the holidays!

Fudge Puddles

Way TOO sweet! While the cookie was pretty much your basic peanut butter cookie, the "fudge" basically tasted like the store bought frosting you buy in a container. The smell was too sweet. I tried to eat one of the finished cookies so I could rate it fairly and I couldn't finish it. If my coworkers like them, I'll make them again, but otherwise this definitely is not going into my recipe box.

Cranberry Pork Roast

The flavor was very good. I did not have ground cloves, so I just left that out. I also used two teaspoons of orange juice instead of grated peel. I had just ONE BIG problem; it was DRY! However, it was only dry because I read some other reviews where they said they left it in the crockpot for 9 hours. Not sure why there's didn't come out dry, but mine sure did. I'll make this again, but will go by the 4-5 hours as listed because I think this would have been absolutely delicious had it not been dry.

Amazing Pork Tenderloin in the Slow Cooker

Sorry, but this was not amazing, at least not for me. Now my 13 yr old on the other hand couldn't get enough! The meat was very tender and fell apart, but the flavor was actually too much for me with the wine. I would probably cut back some on the wine next time.

Basic Ham and Bean Soup

I chose this recipe because of the high reviews, but I wasn't excited about the end result. This was my first time making a bean soup and while the broth had a wonderful flavor, all you could taste was broth and beans. All the veggies were so mushy and had no flavor of their own. I think I'll try this again, but I'll put the veggies in half way through cooking so maybe they won't be so mushy and I think I'll add some potatoes as well since it seemed to be lacking something more solid other than the beans.

Oatmeal Raisin Cookies IV

I too did the 1/2 and 1/2 for the baking soda & baking powder. I added a smidge more cinnamon and walnuts instead of pecans. I can't wait to bring them all to work tomorrow to get rid of them because I'm eating them all myself!!! YIKES!

Chicken Julienne

This was very good, but I did make a few exceptions just because it seemed too basic. I used some onion powder on the chicken. Sauteed some mushrooms with some garlic, added a small can of peas (for color) and used fat free half and half instead of heavy cream to cut down on the fat a bit. I think even if I had stayed true to the recipe it still would have been very good because the simple changes I made weren't a huge deterrent from the recipe. I put this over some Penne pasta and really wish I had doubled the sauce because it was not "saucy" enough. Overall, this is a great recipe and I will definitely make it again.

Tangy Slow Cooker Pork Roast

I made this exactly with only one minor change... I did not have an onion so I used about a tablespoon of onion soup mix. Used all other ingredients as listed. My daughter couldn't get enough and my boyfriend said, after the 3rd day, this was the best pork roast he's ever eaten. That right there is a 5 star review!

Maple Pancakes

I made this exactly as called for and I actually prefer this over the much higher rated "Fluffy Pancake" recipe on here. While I didn't really taste the maple syrup, I may just use vanilla extract next time, the pancakes were flatter and easier to make unlike the "Fluffy" ones that just ended up being a big blob in the pan.

Red Skinned Potato Salad

This is only my 2nd time making potato salad, but this was missing something. I did make some modifications as others suggested: 1 cup mayo 1 cup miracle whip - while the zip gave it a good flavor I think it was just a little too mayonnaisie. Maybe next time I'll do 3/4 of a cup of each. Used green onion instead of yellow. Omitted the bacon and celery. Added a pinch of dill, a tsp of sweet relish and about a 1/4 tsp of mustard. However, the mayo/miracle whip pretty much over powered everything. Not sure how everyone else will like it. It's edible, but just lacks something.

Spooky Witches' Fingers

Yummy! Typing this just as I finished eating one not even 5 minutes out of the oven. Only did a few things different, but basically followed the recipe. I accidentally over spilled the almond extract so it was basically doubled. I used the raspberry jam in place of the gel and I added about a tsp and a half of lemon from a previous review; not sure if the lemon had any effect. However, the end result...while my first batch of fingers came out fat, they were pretty good and had a good almond taste. I'm going to try the next batch with thinner fingers and see how they come out! :) Oh, I also used the almond slivers and not whole almonds for the finger nails.

Bread Pudding II

This was okay, but tasted more like a French Toast recipe than a bread pudding recipe. It was also a bit too sweet for my likings, but my daughter didn't think it was too sweet. Might make it again, but for a breakfast main or side dish.

Applesauce Bars

I don't post reviews often, but I was so surprised as to how delicious this turned out that I had to post! I followed the recipe exactly with one exception. I didn't particularly care for the icing, so instead of spreading it all over, I cut a very small hole in a plastic baggie and put a thin line design on the whole cake so there wasn't so much. I'm not a big cake person and I had a couple pieces and so did everyone else!
