Mom's Country Gravy

Oven-Roasted Asparagus

Made this tonight to go with the Baked Salmon II recipe on this site. I took the olive oil, put it on a plate and just took my hands and rubbed the asparagus with it. I then placed the spears on aluminium foil on a cookie sheet where I then sprinkled on the pepper, and instead of garlic and sea salt I used garlic salt, about a half teaspoon. I used fresh grated parmesan cheese and sprinkled it all over then rubbed it all together to ensure all the asparagus was coated. As I'm typing this I just realized I forgot to use the lemon at the end!! Baked at 425 for about 10 minutes and it came out pretty darn good! I'll make this again with the baked salmon.

Baked Salmon II

Made with all ingredients, but reduced the salt and pepper to probably 1/4-1/2 tsp at most. Cut olive oil to 3 tablespoons and I'm glad I did because 6 would have been way too much!! I used 3 5oz salmon steaks (boneless & skinless), cooked at 375 for 40 minutes and let sit wrapped in the foil on top of the stove for 10 minutes while I cooked my asparagus in the oven. They were cooked perfectly. I'm not a huge fan of salmon, but this was actually pretty good. I have saved it in my recipe box and will definitely be making again.

Vegan Bean Taco Filling

I did make a couple adjustments just because I can't do spicy! I didn't use cumin or cayenne and just stuck with the 1 tsp each of paprika and chili powder. I also did not use the cornmeal since I didn't have any. I made fresh salsa instead of store bought. We made burritos and I put some homemade guac on top of my beans before rolling it up. It was really good. My daughter said she doesn't like black beans, but ate the whole thing. She did say it tasted so much better the next day!

Stuffed Shells IV

Yummy! I only gave it 4 stars because I made two changes. I used 1 c ricotta and 1 c cottage cheese in place of 2 c's cottage cheese. I used low fat on both to try and cut down on some calories. I also used fresh spinach instead of frozen because I was making this right after work for dinner. This would have made more than 1 9x13 dish, but I had several broken shells so I only got a full 9x13 dish full of this delightfulness. My 16 yo daughter said these were awesome! Oh, I did add about a teaspoon or so of garlic salt to the ground turkey while it was cooking.

Grilled Asparagus

Yummy!!! So simple and yet oh so tasty! My bf grilled the asparagus and I steamed some... we ate his before the rest of dinner was even finished cooking! Yes, it's simple, but the grill gives it some flavor and crisp!

Scallops One - Two - Three

I made 6 really big scallops. I fried the bacon a bit first since I like my bacon crispy. However, I did do something a little different. I only made one of the scallops with lemon juice. I made two with nothing other than the bacon and on the other 3 I used different spices on each one. I have to say, I liked the plain bacon wrapped ones the best. You taste the scallop more rather than spices.

Amish Breakfast Casserole

Made this almost 100% as listed except I used 8 eggs and 3 cups Mexican blend cheese and 1 cup swiss cheese. I did add some salt and pepper, but it could have definitely used more. While I thought this was just "ok", my 16 year old daughter ate quite a bit of it! I think it was missing something though, just not sure what.

Chicken Julienne

This was very good, but I did make a few exceptions just because it seemed too basic. I used some onion powder on the chicken. Sauteed some mushrooms with some garlic, added a small can of peas (for color) and used fat free half and half instead of heavy cream to cut down on the fat a bit. I think even if I had stayed true to the recipe it still would have been very good because the simple changes I made weren't a huge deterrent from the recipe. I put this over some Penne pasta and really wish I had doubled the sauce because it was not "saucy" enough. Overall, this is a great recipe and I will definitely make it again.

Tangy Slow Cooker Pork Roast

I made this exactly with only one minor change... I did not have an onion so I used about a tablespoon of onion soup mix. Used all other ingredients as listed. My daughter couldn't get enough and my boyfriend said, after the 3rd day, this was the best pork roast he's ever eaten. That right there is a 5 star review!

Awesome Slow Cooker Pot Roast

My 16 year old daughter LOVED this!! I did make one substitute - beef broth for the water. I used a 2lb Chuck Roast since we do not have a huge family to feed! I used the 2 cans of COM, 1/2 pack of the onion soup mix. I did NOT sear the meat as this is completely unnecessary. It actually is a myth that doing this holds in any flavor, so I wouldn't waste my time. The only other change I will make next time is using a low sodium broth as this was a bit too salty for me.

Slow Cooker BBQ Chicken

I gave it only 4 stars because I made some adjustments. Instead of using syrup I used a 1/4 C brown sugar. I did not have any Chili powder or Cayenne pepper. I used a little more than two dashes of Hot sauce to make up for the missing ingredients. I put this in the crockpot on high for 3 1/2 hours, which was about a twenty minutes to a half hour too long on high because the edges started burning. However, what I was able to salvage, which was a rather large part of it, was delicious! This is a keeper for me.

Maple Pancakes

I made this exactly as called for and I actually prefer this over the much higher rated "Fluffy Pancake" recipe on here. While I didn't really taste the maple syrup, I may just use vanilla extract next time, the pancakes were flatter and easier to make unlike the "Fluffy" ones that just ended up being a big blob in the pan.

Chewy Peanut Butter Chocolate Chip Cookies

While I thought these were just "ok", everyone at work thought they were absolutely delicious. I did change 4 things... I added a full cup of peanut butter because a half cup didn't seem like very much and I used chopped walnuts. The other two changes weren't exactly to the recipe. I reduced the oven temp to 350 because 375 was too hot and I used just a tablespoon to drop the cookies and not a 1/4 cup. They would have been huge! The comments I received were that it was just the right amount of peanut butter, not too over powering. My boss said that between the amount of chocolate and peanut butter, it was a balance so it wasn't too peanut buttery or too chocolatey. I'll keep this recipe for the holidays!

Best Ever Banana Bread

I'm glad I waited before I reviewed this. Right out of the oven and this just tastes pretty plain, but the next day!! WOW! What a difference and soooooo yummy! I did make a few simple changes. Used cinnamon applesauce in place of the vegetable oil. Added 1 tsp vanilla, a 1/4 tsp cinnamon and walnuts instead of pecans. Oh, I also took other reviewers advice and used 1/2 cup brown sugar and 1/2 cup white sugar and even with just one cup it was still plenty sweet! I would NOT use 1 1/2. I've made banana bread often for my co-workers and one made the comment, "This is the best banana bread you've ever made. So moist and tastey!" I think I'll keep this one since it was much simplier than my previous recipe and taste so much yummier the next day!

Red Skinned Potato Salad

This is only my 2nd time making potato salad, but this was missing something. I did make some modifications as others suggested: 1 cup mayo 1 cup miracle whip - while the zip gave it a good flavor I think it was just a little too mayonnaisie. Maybe next time I'll do 3/4 of a cup of each. Used green onion instead of yellow. Omitted the bacon and celery. Added a pinch of dill, a tsp of sweet relish and about a 1/4 tsp of mustard. However, the mayo/miracle whip pretty much over powered everything. Not sure how everyone else will like it. It's edible, but just lacks something.

Easy Chicken Enchiladas

Made some slight adjustments. Used half the sour cream. Only 3 cups of Mexican blend cheese. Cooked the chicken in the crockpot for 2 hours on high with a can of chicken broth, a teaspoon of garlic and 4 chopped green onions. Also used corn tortillas and red enchilada sauce. Two teenage girls loved it. Was my first time making them.

Fudge Puddles

Way TOO sweet! While the cookie was pretty much your basic peanut butter cookie, the "fudge" basically tasted like the store bought frosting you buy in a container. The smell was too sweet. I tried to eat one of the finished cookies so I could rate it fairly and I couldn't finish it. If my coworkers like them, I'll make them again, but otherwise this definitely is not going into my recipe box.

Spooky Witches' Fingers

Yummy! Typing this just as I finished eating one not even 5 minutes out of the oven. Only did a few things different, but basically followed the recipe. I accidentally over spilled the almond extract so it was basically doubled. I used the raspberry jam in place of the gel and I added about a tsp and a half of lemon from a previous review; not sure if the lemon had any effect. However, the end result...while my first batch of fingers came out fat, they were pretty good and had a good almond taste. I'm going to try the next batch with thinner fingers and see how they come out! :) Oh, I also used the almond slivers and not whole almonds for the finger nails.
