Honey Mustard Chicken with Pretzel Crust

Chewy Brownie Cookies

Yum! I followed the recipe as is except I omitted the nuts and replaced 1/2 c chocolate chips with white chocoloate chips. A nice alternative to regular chocolate chip cookies.

Roast Sticky Chicken-Rotisserie Style

Yum! I used only one teaspoon of salt and then rubbed the entire spice mixture on my 3 lb chicken. My husband actually asked for doubles! Can't wait to make it again.

Hot Fudge Pudding Cake III

I don't know what I did wrong but I followed the directions exactly and it came out horrible. The pudding never thickened - it was extremely watery. That made the cake very soggy. And the cake did not even taste very good. I found it to be very bland and fake tasting. So we did not even bother picking at it and eating off the top.Thankfully, my guests had cancelled on me so there was no one there to view my flop but my husband. But the recipe has gotten such great reviews so I might try it again - but not when we are expecting company!

Spinach and Strawberry Salad

Yum!!!! But I made a few changes of course. I used apple cider vinegar instead of white wine vinegar because I don't like wine vinegars. I also added some mango slices. And I can't understand why anyone would want to make such a refreshing and delightful salad and then drown it in oil. I followed the recipe for the amounts for all the dressing ingredients except for the oil. I only used 1 1/2 tablespoons of oil and that was just fine. I'll probably only use 1 tablespoon next time. I also used splenda instead of sugar.

Restaurant Style Egg Drop Soup

I did not follow the recipe exactly but I did use this recipe as a guide. I used vinegar and soy sauce but not ginger as I did not have any. I also used 1 whole egg and 1 egg white (to 4 cups broth) which turned out fine. Next time I'll probably skip the yolk altogether.

Passover Chocolate Chip Meringues

The eggs and sugar whipped up beautifully. I was nervous to add liquid so I used vanilla sugar instead of the vanilla. I also used less chocolate chips - maybe 3/4 cup. But the problem with it was that they did not harden properly. I left them in the oven overnight and they were still soft in the morning. So I turned the oven on to 200 and left it in there for an hour. Then I lowered the temp in the oven to 185 and left them in for another 45 minutes. At that point, the texture was right - they had hardened into that melt-in-your-mouth consistency that they are supposed to have. I was hoping that the leaving it in the oven thing would work because it makes for a very simple recipe - leaving it overnight, oven off, what could be easier and safer? But unfortunately this did not work. I will just have to keep looking for a way to bake meringues. At least I was able to salvage them by baking them longer.

Fresh Fruit Cobbler

Yum! I've made this a few times and love it! Besides for being easy and good, even without any modifications, it's a lo-cal dessert. This time, I used 1/2 splenda and 1/2 sugar and didn't taste a difference. I used mostly peaches with a few frozen blueberries thrown in. It will definitely become a regular.

Adrienne's Cucumber Salad

Yum! I was looking for a recipe like this. I used kirbies instead of cucumbers - they have a much better crunch and I added 1/3 of a red pepper diced - to give it some color. I also substitued most of the sugar for splenda and that worked just fine.
