Hot and Sour Chinese Eggplant

I did mine a little differently. I used regular eggplant and rice wine vinegar instead of red wine. I didn't have a chile pepper so I used a 1/4 tsp. cayenne. I didn't have chili oil so I used sesame. I peeled and sliced the eggplant and brushed both sides with additional sesame oil. I broiled them on both sides along with sliced slabs of red Bermuda onion rings also brushed with the sesame oil. Meanwhile, I combined the sauce ingredients (I doubled the sauce)and microwaved for 2 minutes until thickened, stirring every 30 seconds. When the eggplant was browned, I basted it and served it topped with toasted sesame seeds. It was delicious.

Precious Pineapple Cake

This cake is delicious. I baked it in a 9 x 13" pan so I didn't have a problem with it falling apart as other bakers had.

Spinach and Orzo Salad

I used farfalle instead of orzo and since my husband does not care for feta, I substituted with a mixture of provolone and mozzarella cheeses. I also added grated Romano, salt, garlic powder and parsley. I toasted the pine nuts for added flavor.

Amazing Passover Chocolate Toffee Matzo

Instead of melting the chocolate in the microwave, I sprinkled the morsels on top of the hot toffe-coated matzo and let it sit for a minute until they got soft. Then I spread the chocolate. This just eliminates an unnecessary step. I also toasted the pecans before sprinkling on top. Delicious.

Leg of Lamb

I don't care for lamb but everyone in my family loves it. I never made a leg of lamb before but decided to try it because it seems that I am always making the same dishes over and over. The lamb was a big hit in our house and I'll probably make it again.

Manhattan Style Clam Chowder

As written, I give this four stars. I felt it needed more seasonings so I ended up adding a bay leaf, thyme, and minced garlic. I added the clams at the very end and only heated them through.

Mother's Applesauce Muffins

At first I thought that there would be too much allspice and cinnamon -- one tablespoon of each sounded like an awful lot -- but it was just perfect. I used chunky applesauce and the muffins were so moist and delicious.

Sweet Pork Slow Cooker Chili

I liked this but I can't say that I loved it. My husband and son said that it was good but they don't think that they would want it again. If I try it again, I would have to eliminate some of the sweetness.

Balsamic Green Bean Salad

In addition to the beans, I added fresh asparagus spears cut to the same length of the beans. I sprinkled salt, pepper, parsley and garlic powder into the vinegar and olive oil before pouring onto the salad.

Quick Lemon Poppy Seed Bread

I have been making this recipe for several years and I always get rave reviews. I have made loaves, mini loaves and muffins. They always come out moist and delicious. I made lemon poppyseed muffins today and my son asked if I would make chocolate chip muffins too. I followed the recipe but used a vanilla cake mix and vanilla pudding mix. I added chocolate chips and topped the muffins with a cinnamon-sugar mixture before popping them in the oven. Delicious!!

A Jerky Chicken

Even though I didn't have time to marinate the chicken, it came out delicious. I used chicken tenders (2-1/2 lbs.) and only had to broil them a few minutes on each side. I broiled them with all of the sauce. This one is a keeper!!

Campfire S'mores Smash

Since I do not go camping, I made this by melting the butter and marshmallows in the oven. After mixing the contents, I sprinkled milk chocolate chips on top and spread when melted. Yum Yum

Slow Cooker Sweet Chicken Chili

I didn't have the black bean chili sauce but I did have a jar of black bean and garlic sauce and a jar of Thai chili sauce so I added a tablespoon of each. I thought the sauce needed something, so I added some garlic. We ate the chili with rice. Nice winter meal.

Zippy Swiss Steak

This tasted delicious and the meat was very tender (I pounded it before flouring). As written, there was no sauce in the pan -- just tomatoes and onions. Next time I will use one can (15 oz.) of diced tomatoes and one can (15 oz.) tomato sauce. I also added some seasonings to the tomato mixture: 1/4 tsp. each marjoram, thyme and paprika, one bay leaf and a couple pinches of black pepper.

Black Lung Braised Brisket

I didn't read the recipe through so I never had a chance to marinate the brisket. Even though the meat did not marinate, it was so tender. I thickened the marinade with cornstarch after it was done cooking. It made a delicious gravy. I did not have liquid smoke but I don't think I would have liked it anyway and I only had one can of beef broth. I really don't think that two cans are necessary. I will definitely make this again.
