Spicy-Sweet Glazed Salmon

Reviewed: Jan. 11, 2010
I broiled the salmon as the recipe suggested but I found that the fish burned on the outside. The inside, however, was delicious. I think next time I will try baking the fish instead of broiling it. I followed the recipe exactly except I left out the cilantro as I don't care for it.

Balsamic-Glazed Salmon Fillets

Reviewed: Jan. 11, 2010
I gave this recipe three stars because I felt that there was too much vinegar. I ended up adding 2 more tablespoons each of wine and honey and I also added more mustard (total of 3 Tbl. mustard). I didn't have fresh oregano so I used dried -- just 1/2 teaspoon. With these changes, the recipe rates 5 stars. As written, 3 or 3-1/2 stars.

Fluffy Pancakes

Delicious. This will be the recipe I will always use to make pancakes from scratch.

Flounder with Shrimp Sauce

Reviewed: Dec. 31, 2009
I tried this recipe using bay scallops instead of shrimp and it was very good. I also used low fat half n' half but next time, I will stick with the recipe and use 2% milk as directed. I think the half n' half made it a little too rich.

Cheeseburger Soup I

Reviewed: Dec. 13, 2009
This soup is very good. I used one pound ground chicken because I didn't have beef. I didn't double the remaining ingredients and I forgot to add the sour cream. Great on a rainy, cold day.

Coconut Tilapia with Apricot Dipping Sauce

Reviewed: Dec. 9, 2009
I opted to bake the tilapia rather than fry it to save calories. Other than that, I followed the recipe exactly. I enjoyed it very much but my husband and son said it was just okay. I'm sure they would have liked it if I had fried the fish.

Famous Butter Chicken

Reviewed: Dec. 2, 2009
This came out really good. The chicken was moist and tender but the bottoms were soggy. I turned them over and broiled them for a couple of minutes to try and crisp them up. I also added some garlic powder in addition to the garlic salt because we like our food garlicky. I only needed one egg.

Butternut Squash Casserole

Reviewed: Nov. 27, 2009
This was so good. I made this for Thanksgiving Dinner and it was a big hit. Per the advice of others, I cut down on the sugar by half. For the topping, I chose not to use the cookies because I didn't want it to taste like a dessert. I substituted oats combined with chopped pecans, cinnamon and a little flour. Again, I cut way down on the sugar by half. I mixed it all with melted butter until crumbly and topped the casserole.

Grandma's Corn Pudding

Reviewed: Nov. 27, 2009
This was so good. I made this for Thanksgiving and it got rave reviews. I doubled the recipe but only used half the sugar. I also added one box of Jiffy cornbread mix as someone else suggested.

Ranch-Style Thighs

Reviewed: Nov. 26, 2009
I didn't have Italian Seasoning so I added some of my own: garlic powder, parsley, oregano, basil and pepper. I had to use a lot more than 1/2 cup of the ranch dressing. Next time, I think I will add a little cayenne as well. Very good.

Burgundy Pork Tenderloin

Reviewed: Nov. 26, 2009
The pork was very tender and nicely seasoned. I browned the pork first and I added a can of sliced mushrooms but omitted the celery. The gravy did not thicken for me so next time I will thicken it with a little cornstarch dissolved in water.

Zippy Swiss Steak

Reviewed: Nov. 26, 2009
This tasted delicious and the meat was very tender (I pounded it before flouring). As written, there was no sauce in the pan -- just tomatoes and onions. Next time I will use one can (15 oz.) of diced tomatoes and one can (15 oz.) tomato sauce. I also added some seasonings to the tomato mixture: 1/4 tsp. each marjoram, thyme and paprika, one bay leaf and a couple pinches of black pepper.

These are delicious. I seasoned them with garlic powder, parsley as well as salt and pepper. I use this recipe every time I make string beans.

Chuck's Molasses French Toast

Reviewed: Nov. 26, 2009
The flavoring of the molasses is subtle and is quite delicious. I sprinkled in a lot more cinnamon than the recipe called for.

Beef Burgundy I

Reviewed: Nov. 9, 2009
I cut back on the onion; using two medium sized onions instead of three and I also added about one tablespoon of minced garlic. I also added two teaspoons of garlic powder and I thickened the sauce at the end with cornstarch mixed with water. Delicious over noodles. We dipped our biscuits in the sauce. I will definitely make this again.

Turkey Burger Pie

Reviewed: Sep. 29, 2009
The turkey mixture was quite bland so I added minced garlic, garlic powder, parsley, oregano, salt, pepper and worcestershire sauce. I also added sliced mushrooms. It was good but nothing fantastic. I like ground chicken breast so I think if I try this recipe again, I will use ground chicken. Ground chicken doesn't taste "gamey" like ground turkey.

Apple Breakfast Bread

Reviewed: Sep. 28, 2009
I took the advice of others and added a few tablespoons of oil along with the butter and I used all brown sugar instead of white. I also added one teaspoon vanilla and cut down the cloves to 1/4 teaspoon. I stirred in 1/2 cup raisins and 1/2 cup chopped pecans. Although the bread tasted good, it was very dry. I did not shred or grate the apples because I was lazy so I added them in chopped. Perhaps if I shredded them, the bread would be moist. I don't think that I will try this recipe again. There are other recipes that taste delicious and are very moist.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Sep. 23, 2009
I followed the advice of another reviewer here and baked the tenderloin in the oven at 300 degrees for 1 hour 10 minutes, brushed on some glaze, put back in oven for 10 additional minutes, turned tenderloin over and brushed rest of glaze on other side and baked l0 more minutes (total baking time of 1-1/2 hours). I also cut the chili powder down to 1 teaspoon and omitted the cilantro completely since I do not care for it. My house smelled so good while this was cooking. Delicious.

Shrimp and Crab Bisque

Reviewed: Sep. 23, 2009
Per some of the other reviewers, I doubled the recipe and omitted the wine completely. I added some Old Bay and cayenne. I also added some half n half since it was very thick. It was delicious.
