Veal Angelica

I took a shortcut -- the original recipe just sounded too time-consuming. After breading and frying the cutlets, I placed them in a baking dish, topped them with the proscuitto, asparagus (partially cooked) and cheese. Baked them for about 15 minutes. I didn't let them cook in the sauce because I figured they would become soggy. Made the sauce as directed and topped the stacks with the sauce and served it over pasta. Restaurant quality.

Baked Coconut Chicken

I'm not sure if I will make this again. The bottoms of the chicken were soggy. If I do try the recipe again, I will omit the coconut from the baking pan.

Blueberry Fluff Pie

I prefer a traditional blueberry pie but this was very easy to prepare and it tasted good. I didn't have large marshmallows so I substituted the miniature ones. I wasn't sure how many miniatures were the equivalent of the large marshmallows so I consulted the internet. One website said three cups miniature and another said two cups. I used three cups only because that was how much was left in the bag and I wanted to use them up.

Nikki's Steak Saltimbocca

I was pressed for time so I took a couple of short cuts. I didn't pound the skirt steak and I didn't make pinwheels. I placed the prosciutto and provolone on one side of the steak and folded the bare side over to make a sandwich. I browned them in the oil and then baked them in the oven for about 15 minutes. I served the steak with a simple tomato sauce over pasta. This was an easy and fast meal.

Sweet Restaurant Slaw

Very sweet -- next time I will cut down on the sugar. It was a little too saucy after a couple of hours. Next time, I will either add more shredded cabbage or cut the dressing in half. But it definitely is a keeper. Thanks for the recipe.

Baked Zucchini de Provence

First, I dislike rosemary so I made my own version of Herbes de Provence: 1 tsp each thyme, fennel and lavender and grinded them. These are strong flavored herbs and I sprinkled the zucchini very lightly with it and saved the rest for another time. I also cut back on the salt as others suggested. I enjoyed the zucchini but my husband did not. I probably won't make it again since it didn't go over well with him.

A Jerky Chicken

Even though I didn't have time to marinate the chicken, it came out delicious. I used chicken tenders (2-1/2 lbs.) and only had to broil them a few minutes on each side. I broiled them with all of the sauce. This one is a keeper!!

Key West Chicken

I doubled the marinade ingredients but added more honey and lime juice as others suggested. I also added a few drops of tabasco sauce. The chicken was moist and delicious.
