Baked Corn II

I omitted the sugar and added one small can of diced green chiles. This was a wonderful way to come up with a tasty side dish using ingredients I had on hand. This is one recipe I could see myself making again and again, in a number of different versions.

Moroccan Potato Bean Soup

This is my new favorite soup! I made this in a crockpot, throwing everything in except the milk, cream, and green onions right at the start. I omitted the white pepper and reduced the cayenne substantially, knowing my kids would not be able to tolerate it that hot. A few minutes before serving, I stirred in the milk, cream, and onions. This was delicious! It had a nice, peppery bite that the kids sort of objected to, but the adults agreed it was a fantastic soup.

Lentil Soup

I made this vegetarian, using vegetable broth instead of chicken. This is one of the most delicious soups I have ever eaten! I will certainly be making this one over and over again.

Avocado and Bacon Soup

I made this vegetarian using vegetable stock instead of chicken and artificial bacon bits instead of real bacon. It was absolutely delicious! My husband who hates avocados ate all of his, though he did say it wasn't his favorite.

Chicken Jambalaya I

I made a vegetarian version of this with seitan, and it turned out delicious. I will certainly be using this recipe again. I was out of celery, so I substituted mixed vegetables and a liberal sprinkling of celery seed, which turned out very well, too.

Savory Sweet Potato Salad

This is delicious as is! It's also good with a little mustard, according to personal preference. Next time I think I will add either more hot sauce or a little finely diced jalapeno just to see how that is. I cooked my sweet potatoes just prior to making this; peeled them and cut into chunks, then put the chunks in boiling water for about 7 minutes. Once they were cooled down, I assembled the rest of the dish. Even my finicky husband likes this recipe!

Easy Dinner Hash

I made a vegetarian version of this using veggie sausage crumbles. This recipe is highly adaptable and was a great way for me to use up some odds and ends of frozen vegetables. Simple, and doesn't make a lot of mess, especially if you use frozen diced potatoes and onions.

Roasted Asparagus and Mushrooms

I was a bit skeptical about cooking with olive oil at such a high heat, but this turned out delicious! I think this will be my new way to cook asparagus. I may play around with other seasonings in place of the rosemary, just for some variety, but the recipe is excellent as is.

Gigantes (Greek Lima Beans)

I reduced the oil to 1/3 c. and increased the dill. 1 1/2 hours in the oven was plenty of time and this turned out delicious. I served it with feta cheese and kalamata olives.

Refried Beans Without the Refry

I doubled the cumin and reduced the salt to 2 teaspoons. Used my stick blender at the end just a bit, but still left plenty of whole beans in there, too. They turned out fantastic! No more store-bought refried beans for me!

Slow Cooker Lime Chicken with Rice

I made a vegetarian version of this using vegetable broth, vegetarian "chickn" strips, and a wild rice blend. I adjusted to give the wild rice enough time to cook. Otherwise, I was true to the recipe. This was delicious, and I will be making this again!

Country House Bed and Breakfast Casserole

Wow! My whole family loved this and ate every last crumb! I made a vegetarian version with a sausage substitute, and it turned out great. I could see this becoming a family favorite right away. I did increase the croutons so they pretty much covered the bottom of the pan, but I left the other measurements as in the original recipe.

It's Chili by George!!

I made this vegetarian with Boca crumbles instead of beef. I halved the amount of cayenne pepper because my kids are very fussy about spicy foods. I think this will be my new standard chili recipe from now on. It's delicious!

Camper's Breakfast Hash

I made a vegetarian version of this using vegetarian sausage links. I had diced potatoes on hand, so I used them instead of shredded, and I used garlic butter because I had some left over that I wanted to use up. This recipe is a definite keeper! I'm looking forward to trying this with various cheeses and flavors of vegetarian sausage. I doctored mine with a little hot sauce, but my son loved it just as it was, right out of the pan.

Lemon Thyme Rice

I think this is delicious when you use the original recipe amount of 1 tsp. of dried thyme or 1 T. of fresh thyme. I always use vegetable broth instead of chicken, since I am vegetarian. I added a little garlic to the butter, as well, and doubled the lemon juice. I have made this with brown rice and with a wild rice blend; both were excellent.

Chicken Noodle Soup

This recipe adapted very well to a vegetarian version. I used vegetable bouillon and vegetarian "chik'n" patties, chopped up, for the meat. I reduced the amount of bouillon somewhat`and added extra celery since I had some I wanted to use up. My whole family loved this, meat-eaters and vegetarians alike.

Garlic Broccoli

At the suggestion of some other reviewers I reduced the sugar by 1/3 when I made this tonight. This sauce is one of the most delicious things I have ever tasted, and I will absolutely be making it again, and often. Because my fiance hates broccoli, I will try it on other things, too.
