Shirred Eggs

Reviewed: Jul. 15, 2014
I found that the eggs needed more like 19 minutes in my oven. Then, after the 3-minute rest, the yolks were runny and whites were just barely set. Absolutely the most delicious eggs I've ever had! Will be making this again, for sure.

Indian Sabji Recipe

Served this with home made chapatis. Was a tasty dinner, and not too spicy for my picky eaters.

Tiropitas

Reviewed: Oct. 23, 2008
This is an excellent recipe. I added thyme, oregano, and nutmeg (didn't have any mint) as one reviewer suggested. I also used low-fat cottage cheese and cooking spray, as another reviewer mentioned. It turned out delicious, and even my fiance who says he hates both cottage cheese and feta loved it! I will certainly be making this one again.

Greek Green Beans

Reviewed: Oct. 23, 2008
This was very tasty, and even the picky eaters in the family ate it. Next time, I will try adding oregano as other reviewers suggested, but it was already very good without that.

Easy Dinner Hash

Reviewed: Sep. 14, 2008
I made a vegetarian version of this using veggie sausage crumbles. This recipe is highly adaptable and was a great way for me to use up some odds and ends of frozen vegetables. Simple, and doesn't make a lot of mess, especially if you use frozen diced potatoes and onions.

Savory Sweet Potato Salad

Reviewed: Jun. 27, 2010
This is delicious as is! It's also good with a little mustard, according to personal preference. Next time I think I will add either more hot sauce or a little finely diced jalapeno just to see how that is. I cooked my sweet potatoes just prior to making this; peeled them and cut into chunks, then put the chunks in boiling water for about 7 minutes. Once they were cooled down, I assembled the rest of the dish. Even my finicky husband likes this recipe!

Country House Bed and Breakfast Casserole

Reviewed: Sep. 7, 2008
Wow! My whole family loved this and ate every last crumb! I made a vegetarian version with a sausage substitute, and it turned out great. I could see this becoming a family favorite right away. I did increase the croutons so they pretty much covered the bottom of the pan, but I left the other measurements as in the original recipe.

Hearty Pasta Tomato Soup

Reviewed: Sep. 1, 2008
This is a delicious soup and the recipe is easily adaptable to fit the ingredients you have on hand. I made a vegetarian version with a sausage substitute and vegetable broth, and it was excellent. I will certainly be making this one again.

Beef Cabbage Hash

Reviewed: Aug. 25, 2008
I'll definitely be making this one again! This was a hit with everyone in my family, including my cabbage-hating fiance. I'm vegetarian, so I substituted a meat analog for the ground beef, and that turned out just fine. It did seem to take a bit longer to cook than 10 minutes, but I had it on medium heat, which may explain the difference. Apart from the meat substitute, I followed the recipe as written. Delicious as is, with good potential for making variations.

Shepherd's Pie Complete

Reviewed: Aug. 11, 2008
I made a vegetarian version of this using veggie burger crumbles. I used about half the amount of gravy in the recipe, which seemed about right to me. Everyone in my family loved this, so it will become my standard shepherd's pie recipe from now on.

Chicken Jambalaya I

Reviewed: Nov. 5, 2008
I made a vegetarian version of this with seitan, and it turned out delicious. I will certainly be using this recipe again. I was out of celery, so I substituted mixed vegetables and a liberal sprinkling of celery seed, which turned out very well, too.

Easy Potato Sausage Soup

Reviewed: Jul. 16, 2008
I made this soup using vegetarian sausage crumbles. I melted the onions in unsalted butter instead of margarine, added 1 veggie bouillon cube along with the water, and substituted a mixed blend of vegetables that included carrots because I didn't have frozen carrots by themselves. The soup was delicious, but we did feel like we needed to add a fair amount of salt to it. I'll be making this one again, I'm sure.

Easy Spicy Roasted Potatoes

Reviewed: Mar. 20, 2008
These are easy and delicious! I used much less salt than the recipe called for. They were done about 10 minutes faster, probably because my oven cooks kind of hot. I will definitely make these again!

Winter Lentil Vegetable Soup

This is a fantastic soup! This latest time I was out of cabbage, so I substituted fresh spinach leaves, and it was delicious that way, too.

Whipped Cardamom Sweet Potatoes

Reviewed: Dec. 4, 2007
I made this recipe with the canned fried onion bits on top that people often use on green bean casserole, instead of shallots, because one of my kids has a huge aversion to onions but will eat those canned things. Excellent even with that substitution. Someday I will make them following the recipe more exactly, too. Truth be told, the cardamom is an excellent addition to the mashed sweet potatoes and they would make a fine side dish even without any onions at all. This recipe is definitely a keeper!

Quinoa Pilaf

Reviewed: Oct. 3, 2007
I'm giving this one five stars. The fact that one of my kids hated it had nothing to do with the quality of the recipe and everything to do with the fact that he rejects all things new. The other child loved it and cleaned her plate! I can see myself making variations of this recipe from time to time, with different veggies or types of quinoa. The recipe is excellent as is, but also has great potential for modification.

Scalloped Potatoes 'n' Franks

Reviewed: Aug. 11, 2010
My whole family loved this! I made it vegetarian using tofu hot dogs and substituted 2 T. corn starch for the flour, because we have a wheat allergy in the family. I used a combination of gruyere and mozzarella cheeses because that's what I had available. I'm sure this would be great with almost any cheese in the sauce. Will absolutely be making this with some regularity, since even my pickiest eaters cleaned their plates.

Danish Potato Soup

Reviewed: Aug. 24, 2010
I made a vegetarian version of this using TVP and smoke flavoring to replace the ham, and adding vegetable bouillon. Next time I will also add a little pepper to jazz it up a bit more. Even so, it's a good recipe, and a nice example of a non-tomato-based vegetable soup.

Indian Style Basmati Rice

Reviewed: Jan. 27, 2007
Having read the reviews, I reduced the amount of cumin seed in this recipe to 1 teaspoon. I needed to add more water as it cooked, but I often have that issue with my cooktop. I will probably add a little extra cinnamon next time, just as a matter of personal preference. We had this with mulligatawny soup, and it was an excellent combination.

Camper's Breakfast Hash

Reviewed: Jan. 27, 2007
I made a vegetarian version of this using vegetarian sausage links. I had diced potatoes on hand, so I used them instead of shredded, and I used garlic butter because I had some left over that I wanted to use up. This recipe is a definite keeper! I'm looking forward to trying this with various cheeses and flavors of vegetarian sausage. I doctored mine with a little hot sauce, but my son loved it just as it was, right out of the pan.
