Bill's Sausage Gravy

My family is Appalachian and I was raised on a farm eating biscuits and gravy, eggs and fried apples. I tried this recipe because...well I'd never seen anyone "measure" a gravy recipe. We are a dump and pour until it tastes right family. My granny knew what she was talking about when she told me if you want the best tasting sausage gravy use bacon grease as the base and I have to agree. I gave this a shot but it is much better if you reserve bacon grease to brown your flour in then add the drained sausage pieces to the gravy. Also, for more punch try white pepper...everyone seems to forget about that little gem.

Ratatouille

This recipe will surprise you if you've never had Ratatouille. When you look at the ingredients (at least when I did) you may fear there will be little flavor. Boy was I wrong! I really was shocked by the amount of hearty flavor these simple ingredients provided! I know many people eat other things and use this as a side dish, but I make my whole meal out of just this...maybe a piece of bread as a bonus. This has become a real staple meal in my household....THANKS FOR SHARING!!!

Ratatouille

Sweet Potato Minestrone

Yum, yum, yum, yum, yum!!!! This has got to be the absolute BEST recipe I have EVER tried from All Recipes. I am not a fan of the traditional sweet potato so I got on here to try and find a new way to cook it as it is an incredibly healthy veggie to consume. When I stumbled onto this recipe it was a Godsend!! The first time I made it I accidentally picked up chopped tomatoes with chiles rather than the Italian seasoned tomatoes that the recipe calls for. It turned out brilliantly:) When my family came to visit I made it with the Italian seasoned tomatoes as called for because I know my parents DO NOT appreciate spicy food. It was good this way as well, but when cooking for myself I will continue to use the tomatoes with chiles and I would highly recommend this substitute for anyone who likes their food a little on the spicy side. I would also follow the advice about garlic bread. Garlic bread compliments this recipe beautifully and I wouldn't serve it without it:)

Marrakesh Vegetable Curry

I've been eating mostly vegetarian fare for about two months now and was excited to find a new recipe that incorporated sweet potato (the sweet potato minestrone from this site is out of this world). Sweet potato is one of those very healthy veggies that I can't stand...at least cooked in traditional ways:) This recipe was fabulous! I wanted a little more crunch so I doubled the almonds and I think I may add a little more raisins the next time I make this. I didn't substitute anything for the orange juice but I did add 3/4 tsp. of ginger which gave it a fair amount of zing...plan to heat up the leftovers tonight and serve with cous cous. I would recommend everyone gage the spices according to their own likes and dislikes...it won't ruin this recipe...promise;)
