Hearty Vegetable Lasagna

Reviewed: Mar. 13, 2013
This lasagna is awesome! I did make a few changes....I used a diced zucchini instead of bell peppers, used portabella mushrooms, added 2 cups of chopped spinach, used fresh basil and I only used 1 jar of tomato sauce as I don't like lots of sauce. I also messed up and put all 4 cups of cheese in with the ricotta and egg mixture...so then I had to add some extra on top...it would be better without the mistake but was still great. I didn't add any seasoning and it was very flavorful! My husband who is a big meat eater loved it!

Zucchini Brownies

Reviewed: Aug. 4, 2011
These are amazing! I used applesauce instead of oil and they came out perfect. I could eat them without any frosting at all, they are soooo good! I used bigger shreds of zucchini and like the texture it gave the brownies. Super easy and so good!

Banana Banana Bread

Reviewed: Mar. 14, 2011
This recipe is very good! I used 1/2 regular flour and 1/2 whole wheat flour. I also used 1/2 cup of brown sugar and then 1/4 of applesauce so it wasnt too sweet. I added nutmeg, cloves and a lot of vanilla. It is very good and very moist!

Ultimate Irresistible Granola

Reviewed: Sep. 28, 2010
Amazing!! I have made this several times and no matter what I substitute it is always good! Sometimes I use agave instead of honey, butter instead of oil and I never have sesame seeds, so I dont add them. I also usually sprinkle some nutmeg, ginger, cinnamon or cloves on it before baking! Thanks for the wonderful recipe!

Greek Lemon Cake

Reviewed: Jan. 25, 2010
This has very good flavor. I ended up having to use half lemon and half lime zest as I didnt have enough lemon and I baked it in a square baking dish. It still turned out great. I add some key lime juice to my frosting which added a kick. I think this cake is great! Not sure why it didnt turn out for others......but I do know its important to follow the recipe exactly if you expect it to turn out good!

French Onion Soup Gratinee

Reviewed: Jan. 18, 2010
This is amazing! It has wonderful flavor and is a meal in itself. I served it with a green salad and a glass of the same red wine I used in the recipe. I was a little intimidated by the amount of preparation but its quite easy. Just follow the instructions! I thought the onions would burn if I cooked them that long and it looks like so many onions, but they cook down! This was easy and turned out great! One of my new favorites!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Reviewed: Jan. 3, 2009
This recipe is Amazing! I added Shrimp in with the crab mixture as well and used jalapenos instead of bell peppers. The sauce takes forever to make but it is well worth the wait! It would save time to start the sauce ahead of time instead of starting with the crab stuffing. Also, when the meat is finished and you return the sauce, mushrooms & Dijon mustard to the pan, it will take another 20 + minutes to thicken. I just added a little cornstarch! This is an excellent recipe that I will use over and over, when I have extra time! I also added Shrimp in with the crab mixture. Also, I only made two steaks but made the full amount of sauce for 4 steaks....We each had just the right amount of sauce, if you want more, double the sauce recipe.
