I run an online jewelry business from home and I have three horses that I barrel race on. I also enjoy running and reading. I love cooking and love experimenting with new recipes and new ingredients!
My favorite things to cook
Everything! I insist on cooking homemade because its a challenge and because its healthier. I love cooking mexican food, and make some killer salsa! I also love new breakfast recipes and salads. My favorite thing is making something like salsa or green salad and just adding whatever is in my fridge or produce basket. Those creations are always the best!
My favorite family cooking traditions
The women in my family dont know what a measuring cup is! Its so much fun when we all get person will be making something, and someone else is throwing spices in and adding to it. Our family gatherings always have amazing food that none of us could recreate if we tried!
My cooking triumphs
Baking! I have finally figured out baking! You cant just throw ingredients in like you can when you cook. Ive also made a few pretty difficult recipes like a crab stuffed filet mignon which takes forever, home made maple bars, and I canned jam, salsa, pasta sauce and pickles this year! I love a challenge to make something really difficult!
My cooking tragedies
Cookies, cookies and all cookies....until I found the most wonderful recipe for cookies on here. It never fails....well unless you accidentally add powdered sugar instead of flour!

Hearty Vegetable Lasagna
This lasagna is awesome! I did make a few changes....I used a diced zucchini instead of bell peppers, used portabella mushrooms, added 2 cups of chopped spinach, used fresh basil and I only used 1 jar of tomato sauce as I don't like lots of sauce. I also messed up and put all 4 cups of cheese in with the ricotta and egg then I had to add some extra on would be better without the mistake but was still great. I didn't add any seasoning and it was very flavorful! My husband who is a big meat eater loved it!

Zucchini Brownies
These are amazing! I used applesauce instead of oil and they came out perfect. I could eat them without any frosting at all, they are soooo good! I used bigger shreds of zucchini and like the texture it gave the brownies. Super easy and so good!

Banana Banana Bread
This recipe is very good! I used 1/2 regular flour and 1/2 whole wheat flour. I also used 1/2 cup of brown sugar and then 1/4 of applesauce so it wasnt too sweet. I added nutmeg, cloves and a lot of vanilla. It is very good and very moist!
