Bean Soup With Kale

This is very good. I used 1 can diced tomatoes instead of plum tomatoes, I didn't use parsley, and I added 1 boneless, skinless chicken breast cut in cubes and sauteed. Delicious!

Divine Hard-Boiled Eggs

Some reviewers are finding the eggs hard to peel; it probably isn't the recipe. The fresher the egg, the 'stickier' the shell. My sister used to keep chickens, and when she planned on hard-boiling eggs, she would let them sit in the fridge for at least a week before cooking. Otherwise they were really impossible to peel without the shell shredding the egg white.

Spelt Noodles

I just want to point out that spelt is actually wheat. From about.com: celiac disease: "Spelt is a species of wheat and is NOT gluten-free. People who believe that spelt (scientifically known as Triticum spelta) is gluten-free and safe for people with celiac disease are mistaken. According to the Food Allergen Labeling and Consumer Protection Act of 2004, foods that contain spelt or kamut cannot carry "wheat-free" or "wheat-alternative" labels." So if gluten is the reason for being on a wheat-free diet, spelt is not the answer.

Roasted Garlic and Eggplant Soup

I made this as written, except for omitting Worcestershire sauce. Delicious!!! Very filling, and a nice warming soup for a cold day. I think next time I will increase the cayenne, as I couldn't tell there was any. This is definitely a keeper!

Greek Chicken Pasta

I made this with pheasant breast. (My husband hunts.) It was wonderful! I used canned diced tomato instead of fresh, and dried parsley instead of fresh. I did add the kalamatas. Definitely a keeper!!!

Wow- delicious!! I made it with sea scallops (cut up), frozen raw shrimp, and pollock. (The mussels I bought had not read that they should open up after soaking for 1/2 hour, so I will do something with them tomorrow.) I will make this again; I may try clam juice, as it seems like it would add a lot of flavor.

Italian Meatballs

This was pretty good; I made it with 6 lb meat, 2 c bread crumbs, 1/2 c each oregano & parsley, 1 ts garlic powder & I added 3 eggs. They were done, almost overdone, at 25 minutes, though.
