Heart Attack Eggs
OOHHHYEAH, man. I discovered this gem of a meal when I was about 8 or 9, and I haven't looked back since. I LOVE to eat my eggs and bacon (turkey bacon now that I'm older) this way, and at 26, I plan on eating them like this as long as I can stand at a stove and fry eggs and bacon. If you really want to knock up that fat intake, put a few slices of cheese on top of the eggs in the pan....

Cajun Chicken Pasta
Made this for my boyfriend and he loved it....and let's just say, he's a very "meat-an-potatoes" kind of dude. I noticed that some other posters were worried about the consistency of the sauce. I tried a little trick to thicken my sauce and it worked really well, it's actually the same method I use to make stovetop macaroni-n-cheese. If you melt a little butter, add some cornstarch (I use flour) to make a rue, add the cream, and then add it to the dish, it thickens quite nicely.

Black Bean and Corn Salad I
I have discovered that the things I couldn't stand to eat as a child, have a soft spot in my heart for now. Number one on the list...Black Beans. I love them, and this recipe is perfect. it's cool and refreshing, and the 5-year old in me now yells, "Yes! Black Beans!"
