Avocado Mango Salsa

This was wonderful! I did not use a habanero and wished I had. It's delicious without but I will definitely use a habanero or maybe a jalapeño next time.

Chocolate Chip Cheesecake I

This cheesecake is WONDERFUL!!! I made per the recipe and would not change a thing. The only thing I would do differently is to chill overnight. By the time the cheesecake was fully cooled, enough to put in the refrigerator, I only had about 3 hours to chill before serving. I used a stand mixer and it was quite creamy, I didn't think it was too dense at all. As directed, I cooled in the oven and no cracks.

Pita Chips

Like several other reviewers, I used Olive Oil Pam to save time. For toppings, I only used a little sea salt and Italian seasoning - that's it! Baked at 350 for 8 minutes, turn and bake another 8 minutes. Very crispy. I had tried baking as specified in the recipe but they came out kind of chewy, not really what I was looking for. Be sure to separate halves of the pitas after cutting. It's wonderful with home made hummus.

Hummus III

Like many reviewers I tasted first and made a few changes. I did not think it needed more lemon but I did use about 3 times as much garlic, but we really like garlic. I added 1/8 tsp. crushed red pepper (will try chipotle Tabasco next time) for some "zip". I did not have tahini so I used about 1/4 tsp. of sesame oil and I thought it was fine. Quick and easy, I will definitely make again!

Louisiana Sweet Potato Pancakes

These were so good! As other reviewers mentioned, I added 1 TB sugar, 1/2 tsp. vanilla and 1/2 tsp. cinnamon. I also mixed all the wet ingrediants in a food processor, it was so quick and easy.

Slow Cooker Stuffing

This was a very easy way to make stuffing for someone with a small oven. I think I might have added too much broth because mine was somewhat "gluey." I'm not sure if I would make this again.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

I made with sweet potatos instead of yams and it was still very good. Use fresh rosemary, it makes quite a difference. I thought it had a very good overall taste, but if you like a strong garlic flavor use more. My guests thought it needed a little more salt, but that may be because I used very little salt in cooking.

Chocolate Chip Cheese Ball

I have had this several times (oh it's so yummy) but it was the first time I made it. After reading several reviews that mentioned it didn't "set", I tried something that worked pretty well. I poured the mixture into a small bowl line with plastic wrap and let it chill overnight. By the next day it was very firm and I just peeled off the plastic wrap and rolled in mini-chips. I served with graham cracker strips.

Ginger Glazed Mahi Mahi

Outstanding!!! I had read several comments about this recipe being "restaurant quality" and it is absolutely true. I too used dried ginger, added about 1 TB of fresh chopped cilantro and cooked in a fish basket on the grill. The only thing I would do differently next time is to use fresh ginger. My husband has been raving about it for two days now and we will be making this for our next dinner party.

Savory Garlic Marinated Steaks

Absolutely wonderful! We tried it on NY strips and marinated about 6 hours. We followed the recipe "as is" and it was perfect. The only thing I might try differently the next time is to leave out the liquid smoke and use a smoker box w/ wood chips in the grill.

Chicken Enchiladas II

Very good, with a couple of minor modifications. My husband and I like a little "zip" in our enchiladas, so I added 1 tb dried parsley, 1/2 tsp dried oregano, 1/2 tsp ground black pepper, 1 tsp chile powder, and 3 small ground super chile peppers. Probably any type of ground chile would work, chipotles would be especially nice. I also used fat free sour cream, you'll never be able to tell the difference with all the other ingrediants. I will definitely make this again.

Exquisite Pizza Sauce

This is fabulous - my husband makes it (minus the anchovy paste) and uses it on "Jay's Signature Pizza Crust." It's very easy, an no matter how pressed for time I would never use store-bought pizza sauce again.

The Best Rolled Sugar Cookies

I was somewhat disappointed w/ this recipe, especially given the 5-star rating. The dough was not that difficult to work with, as long as you keep it cold. I was disappointed with the flavor - very bland - and texture. The next time I make sugar cookies I'll stick w/ my grandmother's recipe.
