I have to admit, I was a little skeptical, especially after it came out of the oven and it looked so dry on the outside. I was afraid that it was just going to be a dry, crispy mess. Boy was I wrong!!!! This was absolutely delicious!!! It had the richness of a chocolate cake without the sickly sweetness that you get from traditional cakes. I served it with raspberry sauce and homemade whipped cream and everyone thought it was great!

Asian Coconut Rice

I was surprised by this recipe...I was expecting a very strong coconut flavor and was a little disappointed to find out that it was so mild that it if someone else had made it, I would never have guessed that it had coconut in it. I used light coconut milk, so maybe that was it. HOWEVER, the thing that surprised me was that even though it wasn't very strong, my husband and I couldn't stop eating it! It was delicious!!

Pesto Turkey Burgers

This was absolutely DELICIOUS! My husband is a very very picky eater and he loved these as well, and that says a LOT. The flavors were perfectly balanced, I wouldn't change a thing about it. I was a little concerned that the feta would be strong, but it really wasn't at all (I'm not a huge feta fan). I served these on a bun with a little mayo and boston lettuce with a tomato/mozz. salad on the side. Perfection!

Beef and Irish Stout Stew

DELICIOUS just as is! I served it over mashed potatoes and could have consumed the entire recipe in one sitting. Absolutely wonderful!

Burrito Pie

Both my picky sister and husband loved this. I took the advice of others and added a packet of taco seasoning, but next time I'll probably only do half a package as it overpowered the dish a bit and became more of a "taco pie." Served it with sour cream and it was delicious! I used 3 tortillas per layer and I let it rest for about 10 minutes before trying to slice it up. I think that helped because we didn't have the soupy mess some people seem to have had. We probably could have just used 2 tortillas per layer.

Individual Beef Wellingtons

As my very happy husband remarked..."Restaurant quality!" Super easy and quite tasty. I omitted the parsley because I forgot to buy it, but I put the mushrooms and onions in the food processor prior to sauteeing in the brandy and butter as was suggested and it was a great idea. I served this with spinach sauteed in garlic and olive oil and baby carrots. Delicious!

Hamburger Steak with Onions and Gravy

Delicious! We had this for a Saturday lunch and I served it with some fries. My husband is a meat and potatoes kind of guy and this was perfect. Didn't add the sherry because we didn't have it on hand, but it was still delicious!

American Chop Suey II

Man Pleasin' Jambalaya

We love this recipe! It has become a weekly favorite in our home. I leave out the mushrooms and carrots, but keep everything else the same. I think the key is the chicken broth - it gives it a wonderful depth of flavor!

Seashell Supper

I made this dish once before exactly as it was written, but my husband and I were not super impressed - it tasted quite watery and a little bland. However, I made it tonight with a few changes - I left out the water completely, I used a 28oz. can of diced tomatoes with the juice, and a 14 oz. can of tomato sauce. It was delicious!!
