Stuffed Tomato Basil Chicken

These turned out really good. I decided to grill them on the bbq instead of baking since I only have use of a bbq for another couple weeks and want to take advantage while I can. I had to improvise on the marinade. I sprinkled dried garlic and herb seasoning on them and refrigerated with olive oil overnight. I used canned diced tomatoes because I had an open container in the fridge I wanted to use up. They were fine but I'll use fresh tomato slices next time as called for. I only used 2 slices of bacon per breast, because that was all I had left. I found that was more than enough. They are tricky to hold together, but so good

Asparagus Roll-Ups

These were great and they all disappeared at last night's party. I cheated and used Pillsbury Hot dog wraps. I also used onion and chive cream cheese like another reviewer suggested. I used bacon bits just to keep it simple (and a tad healthier).

Kielbasa Appetizers

I read all the reviews first, about it being too sweet. I decided to add the rest of the ingredients first, then add brown sugar by the tablespoon, taste testing as I went. I wound up only using 2 tbsp of brown sugar. I didn’t have a full bottle of bbq sauce, so made do with ¾. I also added a couple dashes of Worcestershire sauce. I cooked down the sauce on med for about half an hour, then put the meat in the slowcooker and poured sauce over top. I thought they kind of tasted like canned beans and wieners, but could be the type of bbq sauce I used? Heinz original. They weren’t bad, but not too popular at the event I made them for.

Sauteed Mushrooms

I made this and loved it! The next time I went to make mushrooms I didn't have the ranch dressing mix, so I used Clubhouse Creamy Pasta Salad mix. It was even better!

BACARDI® Mixers Pina Colada Cake

I made this substituting the water for rum 1 for 1, which I thought was too strong. Next time I would use 1/2 rum 1/2 water, as another reviewer suggested. It was well received at the bbq I made it for, no leftovers.

Zucchini Cheese Garlic Appetizer

I didn't have enough zucchini so I only used 2 cups. I chopped them in a chopper and drained the excess liquid. I only used 2 eggs hoping to make it less "quiche" like. Make sure you don't substitute a different kind of oil, I had to use canola oil and it came out way too greasy. But I thought it tasted great! So easy!
