Heddy's Black and Red Bean Soup

This was the blandest soup I have ever made. Not sure I can even call this a "base" soup. I followed the directions exactly then went back to double check that I didn't make an error. I made the maple syrup version, it didn't have any flavor besides the beans, so I added salt and a general no salt seasoning and red pepper flakes. It helped but it still wasn't good. I noticed most of the good reviews were for the version using the chili powder.

Flourless Peanut Butter Cookies

these are great! follwed other reviews and added a good splash of vanilla and used 1/4 c white sugar and 1/2 c brown sugar. Used a small cookie scoop and pressed with a fork, took about 10 min to bake. perfect!

Tuscan Soup

this was a great simple soup. Followed others advice, added a can of drained diced tomatoes and a can of drained and rinsed white kidney beans. I used more spinach than called for and added a couple pinchs of red pepper flakes along with fresh basil, garlic and parsley.

Rhubarb Strawberry Crunch

This was wonderful, per other reviews I cut down on the sugar to about 3/4 c of each, could have even used less. I also took other's advice and increased the fruit, I used 6 cups of each in a 9 x 13 pan and it was perfect.

Burrito Pie

So good!! Followed other's advice and added taco seasoning and cumin (eye-bolled it)and tore the tortillas to fit the pan, worked perfectly. Two layers of double/tripled tortillas. Skipped the olives, we don't like them. Used salsa instead of taco sauce, didn't measure but it was probably 2 cups....forgot to add or spread the refried beans but threw in a can of black beans into the mixture. Made one for dinner and one for the freezer, not sure how long it'll last in the freezer, we're ready to have it again! Topped with sour cream and guacamole. Will definately make again.

Best Ever Banana Bread

Fresh Pear Bread

Completely agree with BARNKITTY, I made this a couple months ago, my pears were real ripe so I left out the water as suggested by others, still came out very wet, way too moist. It had good flavor but hard to eat as it was just too wet, made it seem like it wasn't cooked through, even though it was more than done.

White Bean Chicken Chili

This chili is real good, I made it a bit too spicy, as I altered it a bit but it was alot better the next day. Followed others suggestions... doubled it, used verde salsa in place of tomatillo sauce, extra garlic, 2 cans of tomatoes (we love tomatoes), frozen corn, and extra cumin. My own additions were chili powder and cayanne pepper, like I said I did make it a bit too spicy ( I didn't measure the cayanne or chili powder)

Fantastic Black Bean Chili

This was great!! I doubled everything (so that I could freeze some for later) follow other reviews and added cumin, extra garlic, extra canned tomatoes, about 8-10 oz. tomato sauce and then at the very end decided to add an additional couple splashes of red wine vinegar. Very easy recipe, easy to customize to your family's liking. Will make again!!

Parmesan Corn Chowder

This was wonderful, I'm sure I made a few minor adjustments as I never measure anything but I will absolutely make this again, it was really great! I doubled the recipe and added frozen corn in addition to the canned creamed corn the recipe calls for.
