Chocolate Lovers' Favorite Cake

Reviewed: Jul. 11, 2006
Simply THE BEST!!! I cooked exactly as stated and made it for a suprise birthday party I hosted. Everyone LOVED it!! I filled the center of the cake with chocolate chips to raise it up and placed chocolate strawberries in the center and around the rim of the cake. I addded some chocolate frosting as well by marbeling white and milk chocolate together and letting it drip over the sides. To top it off I took white chocolate and made little white hearts on the dipped strawberries. Wow did this cake look professional and was to die for!!!! MAKE THIS CAKE!!!

Italian Summer Squash Polenta Bake

Reviewed: Sep. 20, 2006
I loved this recipe. I made this for my in laws who I didnt know at the time hate polenta. Well they used to at least because they both had seconds of this recipe. It is so easy. To save time sometimes I will not fry the polenta but just slice it and lay it in the pan. I also made this for my mother who cant have onions instead we used garlic and it still tasted great. This is a very versital recipe.

Jamaican Beef Patties

Reviewed: Sep. 20, 2006
I was a little disappointed with these. They were not what i was expecting however they still got ate. I would not recommend the curry powder in the batter mix. The taste seems to take over. Next time I will try that and see if I like them better.

Oven-Roasted Vegetables

Reviewed: Sep. 20, 2006
these turned out good, the vegetable shrinked a ton. I would suggest using more vegetables if your family is vegetable lovers. Also i would spray non stick spray as my vegetables wanted to stick the tin foil.

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Jul. 7, 2011
I decided to make this last night for the first time. I have always heard about how good fish tacos are but these are amazing. My dad and brother who thought the idea was weird were actually amazed. Everyone came back for seconds. My five year old didn't like them, but I will be making these again soon.

Strawberry Muffins

Reviewed: Apr. 8, 2010
These were good muffins, but not what I was expecting. They weren't sweet enough for me. Also around the fresh straweberries the muffin was soggy. I tried to cook my second batch longer to eliminate some of the soggyness but it didn't really work out that well, it just made the tops harder. I'm going to keep looking for a better strawberry muffin recipe.

Sunday Best Fruit Salad

Reviewed: Feb. 25, 2010
I made this last night for my sons birthday party and was told by several people that it was the best fruit salad they had ever had. I love how you can add whatever type of fruit you want to this dish. I made mine with pineapple, pears. grapes, bananas, and apples. I couldn't find peach pie filling so I used apricot. I am so glad I did. It was awesome. I will be making this again with the apricot filling. It's a keeper.

Jay's Jerk Chicken

Reviewed: Jul. 24, 2006
I was expecting a traditional jerk chicken recipe when I made this for a bbq, I was a little disappointed that its not the traditional recipe. This is not a jamaician jerk chicken recipe however it is really good. Everyone at the bbq loved it. The marinade was a little time consuming but I made it for 7 lbs. of chicken. The left overs tasted good as well. I recommend this recipe but like I said keep searching if you have your heart set on jamaician jerk.

Spinach Dip with Water Chestnuts

Reviewed: Jul. 24, 2006
This is always how I make it and it turns out great. Most people love how the chestnuts add a little crunch, I serve this dip with sourdough bread chunks. this recipe can use leek soup mix or vegetable I have used both. The mayo can be omitted or you can add as much as you prefere. This is an easy crowd pleaser.

Shredded Potato Quiche

Reviewed: Jun. 26, 2006
This recipe tasted great once it was finished. However I did have a hard time getting the hash browns to turn. When I finally added the rest of the ingredients the bottom tasted more like mashed potatoes than hash brown, but it was still good. I did add spinach on the top wich I thought made the dish great. This is a great recipe though, next time I will plan on more time for baking the potatoe crust! Thanks for this recipe!
