Cabbage and Corned Beef Chowder

Reviewed: Mar. 28, 2014
I think this is an excellent recipe! I only gave it four stars because I altered it some. I thought for sure that I had a block of cream cheese, but alas! I did not. So, I mixed in a 6 oz. package of grated parmesan cheese, which I did have on hand. It is SO good! :) I'm sure it would be excellent with the cream cheese too. :) Also I used leftover corned beef that I had cooked in the crock pot last week for St. Patrick's Day. - Instead of the packaged deli stuff (it was a whole lot cheaper my way too! ;-) )

Homemade Garlic Basil Mayonnaise

Reviewed: Jul. 7, 2013
First off, I LOVE this method with using a stick blender. I've made it in my regular Oster blender before but this made for much less waste and much easier clean-up. My Pyrex 2-cup measurer worked great to make this in. I did omit the basil (didn't have any) and I also used "Extra Light Tasting" olive oil, because I know olive oil is a better oil for you. Loved the taste. One of these days I hope to try it with the basil too though. :-)

Cheesecake Supreme

Reviewed: Feb. 16, 2013
I made this for my husband's birthday yesterday. I baked it at 200* for 3 hours and 10 minutes as suggested. It was wonderful. I greased the sides of the pan to avoid cracking. I also forgot the sugar in the crust and I didn't miss it a bit! I had to use my oven to bake dinner so I pulled it out and put a towel around it rather than letting it cool in the oven. Seemed to work just fine. I also planned on serving it that evening (mama of 3, running out of time!) so I popped it in the freezer for an hour. It wasn't cold when we ate it, it was more like room temp, but it was SO yummy! And the texture was perfect. :-)

Good 100% Whole Wheat Bread

Reviewed: Aug. 2, 2012
This bread is amazing in my book. I did NOT alter the recipe at all... except for the fact that I used the dough setting on my bread machine and then baked it in my own pan in the oven! It is the softest 100% whole wheat bread I've ever made, without adding white flour or extra gluten! I'm super impressed. I've made it twice now. Once as hoagie rolls and just now as a loaf. It's a keeper!!

Simple, Classic Chicken Potpie

Reviewed: Jan. 17, 2012
This was an awesome recipe! I cooked it in my cast-iron skillet, and then put biscuits on top instead of a pie crust. I just baked it in the oven in the cast iron skillet and it was perfect!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 25, 2010
This was a big hit! Worth the time as opposed to "stove top stuffing" - which I've never cared for much. I took the suggestion of adding more broth and baking it separate for 30 minutes covered with foil. Perfect!

Very yummy! Needed a little more flavor though, maybe more salt? A few more spices?

Pumpkin Pancakes

Reviewed: Nov. 2, 2010
I made these this morning and they were wonderful! I used whole wheat flour, and soaked it in the called-for milk (I used part buttermilk) overnight (it makes for better digestion, and lighter breads - you should try it sometime!) and I also used Rapadura (a dehydrated form of raw sugar) instead of brown sugar. Aaaah - scrumptious! Top with butter and real maple syrup for perfection!

Hot Chocolate

Reviewed: Oct. 26, 2010
This is the best homemade hot chocolate I've ever had! I did this on the stove because I don't like using a microwave, and it was perfect. I also used chocolate chips which melted just fine in the warm milk. SUPER YUMMY!

Nana's Barbeque Sauce

Reviewed: May 11, 2010
This is VERY yummy, and a quick sauce to make! I omitted the onion (because I had none) and used prepared mustard instead of powder (about a tsp) - and it turned out great!!! I will definitely make this sauce AGAIN!
