Dad's Pad Thai

Reviewed: Jun. 27, 2006
I'll give it a five since my family liked it so much. It was not what I expected though...not quite what you'd get as a dish in a resturaunt. still a tasty asian dish though. I omitted one egg and the bean sprouts, added extra red pepper flakes and peanut oil and some chicken. Next time I'll put more cilantro in (a must) and try adding some tamarind. Tasty!

Peppermint Patties

Reviewed: Jun. 26, 2006
JUST like York patties. Great texture. I added extra peppermint extract...almost a whole teaspoon more. Gave it the perfect strength. Also had a TOUCH of almond extract in it...people like that. Tip: make the patties really small like only an inch when flattened. Better in smaller doses. Also, add paraffin to chocolate for sheen. Freeze after. Best served "frozen" The peppermint mixture WILL NOT FREEZE. So don't bother trying to get it to for easier dipping. Use a slotten spatula for dipping. LOVE THEM

Candied Citrus Peel

Reviewed: Jun. 26, 2006
Worked great for me. Make sure you take the peels out of the sugar water after the 15 minutes...I waited too long, so they were a bit too gooey. I then chocolate coated them....AN EXCELLENT CANDY. Very well recieved. I have to hide them so they won't disappear so fast!

Joy's Prizewinning Trifle

Reviewed: Jun. 26, 2006
Great recipe. Very easy. Very quick. Great taste. Used the leftover fondue ingredients (the cake and cut up fruit) and it was perfect. I did end up making more of the topping mixture as it wasn't enough.

Chocolate Mousse I

Reviewed: Jun. 26, 2006
This was wonderful. Loved it. Didn't have bittersweet chocolate but semi-sweet and unsweeted combined seemed to do the trick. Watch out for the leftovers - a gross skim will form on top if you aren't careful. Not pleasant. Great recipe

Creamy Rice Pudding

Reviewed: Jun. 26, 2006
The texture on this is amazing. But lacking in flavor. Add cinnamon, bit of nutmeg, cranberries/rasins/other fruit, and also, cutting back on sugar and adding honey instead gives it a wonderful taste. Love it. Great way to use up leftover rice.

Flourless Chocolate Cake I

Reviewed: Jun. 26, 2006
This was a wonderful dessert. (Feel strange calling it a cake exactly) I sustitued grand marnier instead for water and served with it drizzled on top too - and whipped cream. It was well recieved.

Molten Chocolate Cakes With Sugar-Coated Raspberries

Reviewed: Jun. 26, 2006
Oh boy. These got RAVE reviews, and mine were even under-done. And sooo easy. My batter was a bit cool still when I popped them in, and it took a good 14 minutes at least. Here's a tip: when the top pops up and starts to crack they are perfect. The inside is still molten and that cracked gooey part will fall back in. My sugar coated raspberries were not the prettiest...but they tasted great. Definitely make these again and again and again...

Irish Cream Chocolate Cheesecake

Reviewed: Jun. 26, 2006
I LOVED this cheesecake. The texture and taste were incredible. The four stars is because the crust didn't work out for me, it was too dry...it either needed more butter or less crumbs. It was just too crumbly. Oh well. I cut back on everything by 1/3 for an 8 1/2" pan and it was still very large. My top cracked and it would have looked bad plain, so I took it out after 50 mintures and made a DELICIOUS sour cream glaze to go on top. 2 cups sour cream 1/4 cup sugar 1/8 teaspoon almond extract 2 teaspoons + of bailey's Put on top and popped back in for 10 minutes. Then put grated chocolate on top and promptly refrigerated. It was for my mom for her birthday and EVERYONE LOVED IT.

Best Chocolate Chip Cookies

Reviewed: Jun. 26, 2006
I LOVE these. The flavor, the texture. They really are the best. I always cut back on the chocolate chips though. Much as a love chocolate - believe me, a lot - I just felt there were too many. Thanks!

Blenty of Blintzes

Reviewed: Jun. 26, 2006
I added sugar to the cheese mixture, vanilla to both, no salt as per reviews, and a fruit layer...just a little bland still. Everyone else loved it, just dusted powdered sugar on top for sweetness...seemed to do the trick sort of....just a little bland really. Also, texture NOT what I expected. All fell apart...the inside mixture is really runny. Still good though. Just not what I was expecting.

Amy's Cilantro Cream Sauce

Reviewed: Jun. 26, 2006
This is delicious. Even though I used just ordinary salsa, didn't have the tomatillo. I forgot the garlic powder then felt something was lacking so I put some in...then later discovered it had called for it all along! Delicious.

Double Tomato Bruschetta

Reviewed: Jun. 26, 2006
AMAZING. I loved them. I added sweet onion to the mixture and fresh parsley as well. Great tip: And in assembling, I toasted the baguettes, then put slices of mozarella cheese on each, then broiled again til melted. Then served. Everyone can dish on their own bruschetta. HUGE hit.

Southwestern Egg Rolls

Reviewed: Jun. 26, 2006
These are AMAZING. everyone loved them. I mixed white cheedar in with the cheese and the flavor was even better. In addition, I wrapped them in red (tomato) flour tortillas and that added a great touch of taste as well. Then, after freezing, I baked them at 425 for 12 minutes. Perfect. Serve with cilantro cream dip

Spicy Chicken and Cilantro Wontons

Reviewed: Jun. 26, 2006
The flavor is amazing. I did not deep fry but froze them and used them in a soup. Delicious. However, I precooked the chicken before making. And when cut open in the soup, the wonton filling does not like to stay together. Is this the cause"? I don't think I would mince the chicken with the other ingredients, but instead, chop of small and add to it. Delicious!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 26, 2006
Pretty good, not great, even with suggested modifications. I'd use a more flavorful chicken broth and cut back on the cream of chicken soup next time. Tasted a little too "soup from a can"

Lovely flavor rice! The jalapeno was too spicy however...not many would eat it. Maybe because I didn't seed it first?

Creamy Pesto Shrimp

Reviewed: Jun. 26, 2006
Probably my fault for not draining the frozen shrimp properly before adding to sauce. Took me a while to get right...had to add cornstarch to get thickness. This dish is only going to be as good as your pesto, so beware. It was well-liked though.

Bob's Mexican Stuffed Chicken

Reviewed: Jun. 26, 2006
The flavor of this is great! But a bit messy for presentation. I added garlic to the mixture, and used tortilla chips like others did. A monteray jack/white chedder cheese mixture would probably work better for the cheese. Delicious!
