Mexican Wedding Cookies

Reviewed: Apr. 20, 2011
I made it w/o any changes. I made it 3 times in one week while my entire family was out of town. Memorized the recipe, and ate them all by myself. No guilt, no regrets, no sharing. And because the good fat of the almonds was there it canceled out the bad fat of the butter. Did not gain any weight. LOL. woot.

Corn Casserole I

Reviewed: Nov. 25, 2004
I personally loved this recipe. I used Jalapenos instead of green chile for added heat. My Indonesian friend loved it too and asked for the recipe.

Pumpkin Soup

Reviewed: Apr. 17, 2006
This was exceptional. My family loved it and we were impressed with the ease of the preparation. I will probably make this soup often. I made homemade croutons with some left over french bread, which turned out to be a great addtion.

Dutch Apple Pie with Oatmeal Streusel

Reviewed: Nov. 9, 2004
My family really loved this pie. It was made with easy to find ingredients and even here in Penang, Malaysia we had a bit of good old American apple pie flavor. I think it tasted better after one day in the fridge.

Best Chocolate Chip Cookies

Reviewed: Mar. 1, 2004
I've been making the wrong recipe for 35 years. This is the Ultimate! Even my "kitchen" challenged 17 year old daughter has great results with these. Many a teenaged boy has lost both his head and his heart to her because of this cookie!

Hot Italian Sausage

Reviewed: Oct. 22, 2007
This was so easy to make. The recipe was nice and flavorful and tasted just like sausage from the old neighborhood in Denver. Personally, I will make it hotter next time.

Creamy Banana Bread

Reviewed: Mar. 28, 2006
I made this using 3 large bananas and it was just right. My parents loved it and between the 3 of us we ate the one of the loaves in one sitting. My mom said she couldn't stop thinking about it. I am saving the 2nd loaf for tomorrow because quick breads are always better the next day. If this one was so good on day one it is bound to be even tastier for day 2. If you live in high altitude, please add about 1/4 cup more flour and sugar so it doesn't sink. If you want a pretty loaf for giving this is a nice choice too as the filling looks "gourmet".

Brunch Enchiladas

Reviewed: Oct. 22, 2007
I love recipes like this where you can prepare them a day in advance. My in-laws spent the weekend. My father-in- law loves anything. My mother-in-law is harder to please. She had seconds of this. YEA! It was lovely with a nice fruit platter, and roasted baby potatoes, and those yummy cream filled puffs you can get at Sam's Club. Set the table with a pretty table cloth and you have a classy brunch.

Pumpkin Bread IV

Reviewed: Dec. 22, 2007
Okay, I am in love with this bread. It took me 5 minutes to whip it together. My oven baked it perfectly in the exact time the recipe posted. I did add an extra 1/4 cup of flour because I live in a high altitude. It made a beautiful Bundt cake and one large loaf. I did post a picture of this recipe. As with most quick breads, it tasted better the next day. You will have to hide it from the family though or it will never last that long

Cookie Salad I

Reviewed: Nov. 10, 2000
I love this recipe. I am surprised it is not more commonly known because it is so yummy. You will have to search far and wide to find an easier to prepare salad. Wait till you are ready to serve this before you add the cookies if you like them crunchy.

Banana Cake VI

Reviewed: Dec. 12, 2003
I was SKEPTICAL. A banana cake is a banana cake right? WRONG. This cake was a huge hit! I ran right out and bought more bananas hoping they would ripen a.s.a.p. My husband was mad cause my kids only saved him a tiny little piece. High Altitude tip.... This cake will sink if you don't decrease the fat by 2 T., decrease the baking powder by 1/4 tsp., and increase the flour by about 1/4 cup.

Bat Cupcakes

This is a darling idea and so easy. My "baby" is in the 9th grade and I know she will just love to help me bake these for the church cake walk. Even my bigger kids will get into this. Thanks!!

Pan Peanut Butter Cups

Reviewed: Dec. 18, 2005
I had great success with this recipe. We live in Malaysia where we cannot get Reese's Peanut Butter Cups. I made these for a Christmas Open House and had RAVE reviews from it from our American friends. I cut the candy into bite size pieces and placed them in candy cups. These will be a yearly Holiday treat at our house!

Indian Tandoori Chicken

Reviewed: Jul. 4, 2006
We have had our share of Indian food where we live overseas. The recipe on the grill was a good substitute for a tandoor oven. My family likes it very spicy however, and we added an extra teaspoon of cayenne to the recipe, otherwise we followed the directions exactly. We found our garam masala at Target, but if you have time it is worth making your own. Recipes are easily found on the internet. All and all this was a very good and healthy dinner. Yogurt cucumber, pineapple, onion salad is a nice sidedish to provide cooling.

Bob's BBQ Sauce

Reviewed: Jan. 28, 2008
This is not the best sauce, I have ever had, but it was very quick and sooo easy. My husband liked it real well. Instead of the ketchup, I used some extra Ragu we didn't use the night before. This sauce made our chicken really tender and moist.

Angel Chicken Pasta

Reviewed: May 5, 2008
My family really liked this recipe. It was tasty, and very easy to make. I give it 4 stars for the fact that I had to do a lot of doctoring:the sauce was too thick, too salty, the angel hair wasn't sturdy enough for this thick sauce, the breasts were dry. Dark chicken would have been better.

Bundt Dutch Apple Cake

Reviewed: Jan. 28, 2009
Turned out lovely. I took out the fat and used 1/2 cup buttermilk, 1/2 cup applesauce. Added a pinch of salt to the batter too. This is a dense coffee cake. Don't expect light or fluffy.

Banana Cranberry Bread

Reviewed: Dec. 2, 2004
I couldn't believe the response I got from this recipe. People raved over its moistness and that it wasn't too sweet. I baked it in a 13x9x2 pyrex pan, and just slices the pieces in small sample sizes. A great way to use up those bananas.

Blue Ribbon Overnight Rolls

Reviewed: Nov. 24, 2004
This was, hands down, the easiest roll recipe I have ever made. That fact alone makes up for the fact that it wasn't the tastiest roll I have ever eaten. But... It was still mighty tasty and everyone gobbled them up at my dinner table. I will teach this to a group of Malaysian women who have never baked bread before. What a great recipe!
