Mexican Wedding Cookies

I made it w/o any changes. I made it 3 times in one week while my entire family was out of town. Memorized the recipe, and ate them all by myself. No guilt, no regrets, no sharing. And because the good fat of the almonds was there it canceled out the bad fat of the butter. Did not gain any weight. LOL. woot.

Stuffed Green Peppers I

Needed some changes. I punched up the flavor with a serrano pepper and a clove of garlic. I had some Ragu I used in place of one of the cans of soup. Because of other reviews, I also parboiled the rice too. My family loved it and fought over who was going to take the leftovers to work the next day.

Bundt Dutch Apple Cake

Turned out lovely. I took out the fat and used 1/2 cup buttermilk, 1/2 cup applesauce. Added a pinch of salt to the batter too. This is a dense coffee cake. Don't expect light or fluffy.

Angel Chicken Pasta

My family really liked this recipe. It was tasty, and very easy to make. I give it 4 stars for the fact that I had to do a lot of doctoring:the sauce was too thick, too salty, the angel hair wasn't sturdy enough for this thick sauce, the breasts were dry. Dark chicken would have been better.

Pinto Bean Pie I

Way too sweet, and an unappealing color. My family didn't like this, and they didn't even know there were beans in it. If you cannot resist trying this recipe, please cut the ingredients in half to make only one pie and sample it in small doses. I did like that it was made with on hand ingredients.

Bob's BBQ Sauce

This is not the best sauce, I have ever had, but it was very quick and sooo easy. My husband liked it real well. Instead of the ketchup, I used some extra Ragu we didn't use the night before. This sauce made our chicken really tender and moist.

Pumpkin Bread IV

Okay, I am in love with this bread. It took me 5 minutes to whip it together. My oven baked it perfectly in the exact time the recipe posted. I did add an extra 1/4 cup of flour because I live in a high altitude. It made a beautiful Bundt cake and one large loaf. I did post a picture of this recipe. As with most quick breads, it tasted better the next day. You will have to hide it from the family though or it will never last that long

Bat Cupcakes

Brunch Enchiladas

I love recipes like this where you can prepare them a day in advance. My in-laws spent the weekend. My father-in- law loves anything. My mother-in-law is harder to please. She had seconds of this. YEA! It was lovely with a nice fruit platter, and roasted baby potatoes, and those yummy cream filled puffs you can get at Sam's Club. Set the table with a pretty table cloth and you have a classy brunch.

Hot Italian Sausage

This was so easy to make. The recipe was nice and flavorful and tasted just like sausage from the old neighborhood in Denver. Personally, I will make it hotter next time.

Roasted and Curried Butternut Squash Soup

Sorry, this soup went uneaten at my house. I had to throw most of it out. We even have sophisticated palates. I will go on with my search for a good squash/pumpkin soup my family will enjoy. My 19 year old said she would rather it be a bit more savory and didn't care for the nutmeg.

Candied Yams

Sorry, I was disappointed with this. I didn't get rave reviews, and my family wanted our other candied yam recipe. No one had seconds, and here it is almost 2 weeks past Thanksgiving and the left overs are still sitting in the fridge. Sigh, I guess I'll go get rid of them.

Grilled Chicken Thighs Tandoori

Having been to India, and living in Malaysia which has a very large Indian population, I know good Tandoori. This is an excellent recipe, considering you are not using a Tandoor oven. We made it for the 4th of July with fragrant rice. MMMMM

Applesauce Doughnuts

Very tasty, and I will make them again. I substituted canned pumpkin measure for measure for the applesauce successfully. I also added a bit more milk to make a runnier batter and used a doughnut batter dropper to get real doughnuts with holes.

Indian Tandoori Chicken

We have had our share of Indian food where we live overseas. The recipe on the grill was a good substitute for a tandoor oven. My family likes it very spicy however, and we added an extra teaspoon of cayenne to the recipe, otherwise we followed the directions exactly. We found our garam masala at Target, but if you have time it is worth making your own. Recipes are easily found on the internet. All and all this was a very good and healthy dinner. Yogurt cucumber, pineapple, onion salad is a nice sidedish to provide cooling.

Carrot Casserole

My 13 year old was surfing the web at school and brought this recipe home and made if for dinner that night. That is proof enough for me to know it was a good recipe if you don't have to have any special ingredients. Well we all loved it. Anything with cheese and butter is good for us. This was easy for her to make and easier for us to eat. This would be good for holiday buffet.

Pumpkin Soup

This was exceptional. My family loved it and we were impressed with the ease of the preparation. I will probably make this soup often. I made homemade croutons with some left over french bread, which turned out to be a great addtion.

Creamy Banana Bread

I made this using 3 large bananas and it was just right. My parents loved it and between the 3 of us we ate the one of the loaves in one sitting. My mom said she couldn't stop thinking about it. I am saving the 2nd loaf for tomorrow because quick breads are always better the next day. If this one was so good on day one it is bound to be even tastier for day 2. If you live in high altitude, please add about 1/4 cup more flour and sugar so it doesn't sink. If you want a pretty loaf for giving this is a nice choice too as the filling looks "gourmet".

Pan Peanut Butter Cups

I had great success with this recipe. We live in Malaysia where we cannot get Reese's Peanut Butter Cups. I made these for a Christmas Open House and had RAVE reviews from it from our American friends. I cut the candy into bite size pieces and placed them in candy cups. These will be a yearly Holiday treat at our house!

Banana Cranberry Bread

I couldn't believe the response I got from this recipe. People raved over its moistness and that it wasn't too sweet. I baked it in a 13x9x2 pyrex pan, and just slices the pieces in small sample sizes. A great way to use up those bananas.
