Garbanzo Bean Chocolate Cake (Gluten Free!)
I used two 15 oz cans beans, so added half again all other ingredients. I didn't want to use chocolate chips, so I followed online instructions and substituted 13 tbs cocoa powder, added 1/3 c extra sugar, and 2 tbsp coconut oil, for the recipe, since I increased other amounts. It made two small cakes. I used coconut palm sugar, instead of white, as I try to stay away from cane sugar. Then, it turned out I didn't have enough cocoa powder, (only had about 1/4 c), so I added chocolate chips, anyway, without melting them first, about 1/4 c, and blended the whole thing in my ninja (like a food processor). It turned out wonderfully! Great recipe. This is the second time I've made it. The first time, I followed the recipe. Both times, I've really enjoyed this cake! The texture is very good, as is the flavor.

Homesteader Cornbread
I made this gluten free, using 2 1/2 c corn meal, 1/2 c gluten free baking flour, 1/2 c corn flour, and 1/4 tsp xanthan gum. Otherwise, I followed the recipe. Very good cornbread! Thank you. It was just as yummy with honey butter as it was with chili and cheddar cheese! :)

Best Ever Muffins
Great versatile recipe to use as a base! I added: 1/2 tsp almond extract, 1 tsp vanilla extract, 3/4 tsp cinnamon, 3 apricot and coconut logs, sliced, about 1/4 c. coconut, and about 1/2 c. sliced almonds. I topped some with cinnamon sugar and some with coconut. I substituted 1/2 the oil with applesauce, and only used about 2/3 of the sugar called for in the recipe. They turned out FANTASTIC!! I love this recipe, thank you!
